Curried Coconut Chicken

Reviewed: Oct. 29, 2011
SO easy and SO tasty!! We did omit the sugar and added some prebaked (leftover) sweet potatoes to the pot and it was delicious! This will be a staple dinner in our house.

Crustless Spinach Quiche

Reviewed: Mar. 4, 2011
We had to alter the recipe, due to what we had on hand: used cheddar cheese instead of muenster (although I'll bet that tastes GREAT!), I carmelized the onions since I don't like a lot of onion flavour and also added some leftover, chopped ham. Good stuff! Quick to make and bakes up nicely!

Oatmeal Pancakes

Reviewed: Jan. 30, 2011
We had to substitute plain yogourt (didn't have any buttermilk) as the only change in this recipe. Mmmmm-mmm!! Great with walnuts and some ground flaxseed, too. HEARTY and delicious!

Mom's Zucchini Bread

Reviewed: Aug. 31, 2010
Fabulous. Yummy! We added chocolate chips (for the kids... really...), split the flour with 1/2 whole wheat flour and it went FAST! Definitely our new zuch bread recipe.

Best Brownies

Reviewed: Jul. 28, 2010
We're rating these a 3.5/5. Followed the recipe to a "tee". Brownies were slightly dry, but had good flavor. Recipe was easy to follow with all ingredients on-hand and frosting was good. Might try it again with some added "wet" ingredients to moisten. Thanks!

Sweet Potato Pie II

Reviewed: Jan. 21, 2009
My husband was skeptical: "Sweet Potatoes??" After his first bite, he declared that I would have to make this pie for any all winter holiday dinners! SOOOOOO delicious!!! My favorite pie ever. (used Grandma Ruth's pie crust)

Slow Cooker Apple-Scented Venison Roast

Reviewed: Jan. 28, 2007
The apples are an essential key to removing any "gamey" taste the roast might have had. We made some alterations for a FANTASTIC pulled roast/stew recipe....First we rubbed salt, pepper and crushed rosemary onto the roast. Placed it into slowcooker with additions (onions, apple, loads of extra garlic), and let sit, covered, for about 10hours on low. In the morning, we added a 14oz can of beef broth, 1/2 bottle of Bell's Porter beer and a few chopped carrots and let it simmer until dinner time. NExt time we'll add a few more veggies to make the most DELICIOUS stew ever! But, as it was, we thoroughly enjoyed it in a bowl served over some cheesy mashed potatoes with gravy (made from the stock). Yum!

Spinach Brownies

The kids loved them! I thought they were a little too buttery (is that REALLY possible??!??), but none were wasted!

Herbed Lentils and Rice

Reviewed: Dec. 15, 2006
This dish was exactly what I was looking for! A wonderful side dish or great on it's own. The kids loved it, too! We used sharp cheddar instead of the swiss cheese, substitued some water for about one cup of broth (to reduce the sodium) and carmelized the onions, first--and it was great! We're definitely keeping this one as a favorite!
