Curried Coconut Chicken
SO easy and SO tasty!! We did omit the sugar and added some prebaked (leftover) sweet potatoes to the pot and it was delicious! This will be a staple dinner in our house.

Crustless Spinach Quiche
We had to alter the recipe, due to what we had on hand: used cheddar cheese instead of muenster (although I'll bet that tastes GREAT!), I carmelized the onions since I don't like a lot of onion flavour and also added some leftover, chopped ham. Good stuff! Quick to make and bakes up nicely!

Oatmeal Pancakes
We had to substitute plain yogourt (didn't have any buttermilk) as the only change in this recipe. Mmmmm-mmm!! Great with walnuts and some ground flaxseed, too. HEARTY and delicious!
