Sicilian Meat Roll

I tried this for supper. I used a pound of venison, a pound of ground pork, Italian bread crumbs, added onion powder, and didn't add ham. It was the prettiest meatloaf I've ever made. I did use a loaf pan and cooked to 165° because of the pork. I served with pasta in rosa sauce and spinach for sides. My husband gave it a thumbs up!

Best Steak Marinade in Existence

I used this on 20 pounds of venison roasts I cooked for my son's wedding. A niece came over and tried it before the day of, and swore it was one of the best beef roasts she had ever eaten.

On Wisconsin Beer Brats

I make this minus the beer, adding sauerkraut, in a skillet on the stove to put over even lowly hot dogs. Addictive as crack!

Best Ever Crab Cakes

Works with tuna! I didn't have crab, red pepper, or tarragon, but these sounded so good I wanted to try them. I doubled the other ingredients, used 3 - 5oz. cans of tuna, and 1 teaspoon of Pride of Szeged fish rub for the spices I didn't have. Sorry to mess with a perfectly good recipe, but these are great. Mine made 10 cakes.

Amazing Italian Lemon Butter Chicken

This is not for the faint hearted. It is strong in flavor. My husband liked it, I thought it was ok, our 7 year old wouldn't eat it. My husband said he'd eat it once a week, so I may have to see how well it freezes.

Out of this World Turkey Brine

Will never do a turkey in any other brine. Great with a couple of tablespoons of Slap ya Mama seasoning thrown in. I use half the recipe for an 8 pound turkey breast, put it in a turkey oven roasting bag to soak, then rinse and put it in a crock pot. Thank you for sharing my secret ingredient! I should add though, the drippings are too salty for gravy so you'll have to make that separate.

Herb Rubbed Sirloin Tip Roast

This rub is excellent. I put it on my roast overnight, then put it in the crock pot. It was wonderful. I will use the rub all summer for the grill, too.

Meatball Sandwich

I was looking for a meatball recipe like I used to get when I lived up north as a child. This one came closest to what I remembered. I didn't have parsley, and I used ground venison and added a little milk, but these turned out great. I would serve them to my Italian friends.

Chicken Tortilla Soup

I, too, had leftover chicken. My husband doesn't do spicy, so I used regular diced tomatoes, and added corn and beans. Substituting canned chicken would make this an excellent have in the pantry meal.

Cabbage Roll Casserole

I made this for supper using two cans of stewed tomatoes and no rice. I gave my 7 year old granddaughter a taste of the broth, and I've caught her twice trying sneak another taste while we wait for Pawpaw to be ready to eat. I did it all on the stove top, and we're having cornbread with it.

Tarte a L'oignon (French Onion Pie)

I made this without the bacon. Instead, I had eye of round steaks sliced very thin I barely browned and put in the crust before I put anything else in. I loved it, my husband and granddaughter didn't. It was excellent the next day to me.
