Chicken Marsala

I made 48 servings of this. It was easy but I didn't flour it before cooking it and used olive oil instead of butter. Everyone loved it! I think it's better plain rather than over pasta. If you are going to put it over pasta, you need to add some chicken broth and half and half to the pan at the end after removing chicken. Also I top it with parmesan cheese over pasta because the pasta makes it a bit bland.

Hash Brown Casserole II

I make this for every brunch/breakfast function I have. It is yummy! If you need to make it quickly, you can use the Bob Evans pre-made sausage crumbles.

Broccoli Rice Casserole

Loved this as a side dish. If you use celery salt and onion powder instead of the celery and onion then you don't have to bake it for 45 min. I mix everything and baked it about 15 min. and it was still delicious!
