Carrot Cake III

Excellent! I made a few changes- the first is that I used 1tbsp cinnamon, then added 1tsp each giner, all spice, and nutmeg. The second is that I a sprinkled chopped pecans on top of the cake after I frosted it, and I didn't use the cream cheese frosting, I made a classic white frosting.

Chicken Florentine Casserole

This is a great creamy and cheesy casserole. What I did differently was put everything but the chicken in the sauté pan, and then just poured the mixture over cooked chicken cubes. I also added some canned artichokes that I halved. I left out the bacon bits as well. Overall, it was a very tasty and satisfying meal. I would make this again and recommend it to friends/family.

Spinach and Feta Pita Bake

Wow, this has alot of flavor! Instead of mushrooms I used Kalamata olives to make it more Greek. I also sprinkled freshly minced basil an top, used whole wheat pitas, and added parmesean with the feta. This is a recipe to keep! Yum!

Chocolate Peanut Butter Date Bars

This did not turn out very well. The chocolate bottom tasted chalky and too dry. The peanut butter layer really did not have a good flavor-it was lacking something even though it had a few of my favorite ingredients for baking. When I tried to put the top chocolate layer on, it smeared the peanut butter layer, making it look like an undesirable treat.

Ham and Cheese Bowties

This is great for leftover ham, especially after Thanksgiving. This homemade sauce is very creamy and cheesy-just the right texture! Mix it in with the bowties and you're sure to please the family.
