Basil, Tomato and Mozzarella Sandwich

Reviewed: Apr. 13, 2010
simple, refreshing, sandwich! Don't skimp on the italian loaf and only use regular bread, it would really take away from the entire recipe. Just filling enough, and low fat, too!!

Mouse's Macaroni and Cheese

Reviewed: Apr. 7, 2010
the best mac and cheese recipe yet!! I did use 16 oz. of velveeta (mild mexican) instead of 8 oz. velveeta and 8 oz. american. I love this recipe! I will certainly make it many more times.

very good tuna cassarole; substituted cracker crumbs for the potato chips to reduce fat content some.

New Orleans Corn Bisque with Smoked Sausage

Reviewed: Mar. 22, 2010
hearty and low fat and low calorie. I didn't even add the shredded cheese, it was so good without it!

not the best marinade, but first time trying shark steaks; surprisingly delicious, THICK, and very filling.

Zucchini and Potato Bake

Reviewed: Mar. 19, 2010
Deeelicious! You would think a recipe with so few ingredients and only healthy ingredients would only be low cal., and lacking in flavor, but this was great!!! I loved it, and my husband who enjoys hearty side dishes more than I do loved it, too!

Tomato and Basil Quiche

Reviewed: Mar. 19, 2010
Outstanding!!! I have never made a quiche before, and this one turned out wonderfully! I did bake it at 400 degrees instead of 350, to keep with the golden brown consistency to determine when it was ready.

Totally Tangy Baked French Fries

Reviewed: Mar. 9, 2010
Very good! Loved the blend of spices. The fries would not get good and crispy, though, even under the broiler for several minutes. If you are familiar with county fair french fries, the 'doneness' of these fries is like that, some are crispy, some are soft. I would definitely make these again.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Mar. 9, 2010
easy and deeeelicious! I took advice from other posters who cut back on the sauce; I added a few ounces when I put chicken in the crockpot, added a few more half way thru cooking, and then a dash when it was served. I did not think this was too salty; moswtly likely due to less hot sauce. I would cook this for no more than 6 hours; I cooked for 7 and it was a little too long; the meat was too soft. Add more chicken breasts to the crockpot so you have leftovers, you are going to love this dish!

Lemon Orzo Primavera

Reviewed: Mar. 7, 2010
Ok, but lacks some flavor. I will make this again but I would add some sort of spice; not sure what. I did add frozen peas to the mix also. Zesting the lemon was a near failure; maybe my grater is junk! Didn't get as much zest as I felt the recipe volume called for.

Gyros Burgers

Reviewed: Mar. 7, 2010
LOVED these! I doubled the recipe since I had one lb. of lamb, and one lb. of ground beef. It actually made 12 burgers. Made greek tzatziki sauce to go with it; perfect!

Yia Yia's Tzatziki Sauce

Excellent sauce with so few ingredients! I am going to experiment with adding dill - I think this will make it 5 stars! Perfect with gyro burger recipe from this website!

Bruschetta Chicken Bake

Reviewed: Feb. 26, 2010
pretty good, but not a bruchetta texture/topping you expect with the title of the recipe being what it is. I did add a side of angel hair pasta and garlic bread to complete the meal! I will make this again.

Chicken in Creamy Sun-Dried Tomato Sauce

Reviewed: Feb. 25, 2010
I agree with some of the other posters; the sauce had an odd taste to it. Next time I make this, I will use canned or fresh diced tomatoes. The chicken was good, and the sauce was hearty and creamy, but a little bland, too.

Green Chili Grilled Cheese

Reviewed: Feb. 22, 2010
Good sandwich! I used Velveeta cheese instead of American cheese slices; I also put just a little diced onions on top of the green chilies.

Slow Cooker Sausage with Sauce

Reviewed: Feb. 20, 2010
Unbelievable! The simplest dish I have ever made, and incredibly, one of the tastiest! Instead of store-bought sauce, I used homemade spaghetti sauce, for our own heartier version. I can see why those that made it for the Super Bowl did, and I can imagine the response!!! One poster mentioned it was too greasy; I did spoon oil off the top before final stir and serving, but it wasn't much. Overall, I would not consider this a greasy dish. I have rated a lot of dishes on this site as five stars, but if I could rate this 7, I would!!!!

Slow Cooker Tamale Pie

Reviewed: Feb. 20, 2010
Simple, yet hearty dish! WOW...I have never made anything like this in the oven or the slow cooker, and my husband and I were very impressed. I have to say I did not expect to the cornbread to expand like it did! I did use the mexican cornbread mix, and that made it even better!!

Mediterranean Chickpea Salad I

Reviewed: Feb. 19, 2010
my sister made this recently for a side dish for a family meal, and I loved it! Very filling, and would be a great summer salad! I gave it four stars because I thought there was just a bit much feta, I will add less when I make it. That is only due to my personal choice to make it less fattening/less calories.
