Cabbage and Kielbasa

This was sure good! Just like the recipe called for except had to use real potato's browned with the onions and regular cabbage. Great comfort food!

Easy Swedish Apple Pie

Oh yes, I tried this recipe and BOY am I glad! Took some ideas and added almond extract to the batter with a little spice (cinnamon and nutmeg). This tastes like a wonderful apple pie without making a traditional crust with all it's the mess! I used the bowl I mixed the apple slices in to also beat up the batter (after pouring apple slices into the greased pie dish),easier clean-up! The crust was a little thick, so dollop it on then spread, but the heat evens it all out. It comes out sweet and slightly crunchy YUM! It is definitely a sweet dessert, but my tart apples needed that!

Overnight Blueberry French Toast

We really enjoyed this for Easter breakfast this morning! I subbed strawberries for the blueberries and used real maple rather than the homemade syrup. I'll be doing this again!

Irish Peanut Butter Potato Candy

I used this recipe and made two kinds of candy from it, the first I added green food coloring and made as recipe suggests, rolled up, chilled and sliced. I was a bit short on powdered suger so ended up using some (quite a bit actually) corn starch to finish it off. The candy was not overpoweringly sweet this way and still tasted good! The second candy I shaped into irregular, potato shaped balls, rolled them in a mixture of equal parts cinnamon and cocoa then pressed in tiny pieces of almond "eyes" Cutest potato, potato candies you ever saw!

Slow-Cooker Posole

I had a flat pork "roast" shaped like a "7 bone beef chuck roast", most of these ingredients and no time so I threw this together in the crock pot. What a GREAT dinner it made! For speed I just browned the whole roast each side, threw two peeled and quartered potatoes in the bottom of the crock pot, half the ingredients, then the meat and topped it with the rest of the ingredients. Personnaly we like mexican without the spice, so we used 1 can hominy, 1 can green mild enchilada sauce and 1 can tomatillos, with quite a bit of cumin. (no red sauce or cayenne). You only need add enough water or broth to barely cover the ingredients. I called it my "posole style" pork roast.

Buttermilk Pancakes II

Very nice! Tender and tastey pancakes. I'm out of all purpose, so used half white whole wheat flour and half spelt and it worked out fine. Changing the servings to 3 and calculating the recipe gave me 7 pancakes, 4 to freeze for another day!

Pickled Jalapenos and Carrots

This was quite a bit more vinegar-y than I am used to having at the restaurants, so after serving them when they were first made, I jarred the remainder with a little more water added to the liquid... I'll come back and add how they turned out after a couple days pickling :)

Lighter Chocolate Chip Pancakes

I was looking for a recipe to use white whole wheat flour and tried this minus the chocolate chips. I used just a bit over half the baking powder called for after reading reviews. They tasted very nice and had a nice texture.

Fresh Strawberry Almond Pie

I am rating this mainly on the recipe for glaze with no gelatin as that is what I was searching for when I came upon this recipe. I think I cooked mine a little long for fear that it would break down, but if you are careful it makes a great glaze to toss whole strawberries in for strawberry pie without having to run to the store for gelatin... it works!

Broccoli Cashew Salad

This is JUST what I was looking for when I searched for the salad like they make at Souplantation, also known as Sweet Tomatoes. After reading the reviews, I cut the sugar to 1/4 cup and it is beautifully balanced. I only used 1/2 pound of bacon too, but it seems just right! I'll also be adding my cashews just before serving so they are more crunchy. It tastes SO good! Thanks for sharing the recipe!

Mexican Style Shredded Pork

I buy my meat at the local Mexican supermarket and they called the piece of pork I bought a "pork chunk" It was a big (3#) flat pork roast that had one bone still in it. I cooked it according to Tora V.'s recipe and let me tell you we LOVED it. I added a bunch of cumin, chipotle chili pepper powder, paprika and onion powder along with a finely chopped onion and red bell pepper (I had no canned green chili). So, it doesn't matter if you don't have the more expensive pork loin. The thing that really knocked our socks off was putting cilantro and lemon juice in the rice! Such a wonderful flavor! We liked making wet burritos from the meat and serving the rice separate, allowing the wet burrito to drip the luscious pork juices onto the rice on our plates. Muy Bueno!

Cucumbers in Sour Cream

It's not necessary to do the 4 hour or overnight soak in my opinion, just mix it all up (with some sliced onion if you like!) and refrigerate while you fix the rest of your dinner. I thought the vinegar to sugar ratio was perfect! I have used plain yogurt in place of sour cream and you can hardly tell the difference!

Juicy Roasted Chicken

This IS the juciest, tastiest chicken I've made. I had to use a little bit more seasoning; While the onion powder was the star, I added a few favorites to it... but I think it's that 30 minutes sitting covered that makes it so moist, along with the celery inside. We loved it!

Cream of Celery Soup

Cream of celery soup always reminds me of my Great-Grandmother it was something she often made when I was spending the night. Lovely recipe, I leave out the carrots and leave in the celery, just chop it extra fine. Thank you for the recipe!

Italian Cream Cheese and Ricotta Cheesecake

I followed the ingredients exactly but halved the recipe, cooking it in an 8" springform pan, but allowed it to set in the oven longer (after it was turned off) since we were leaving for a while. The taste is wonderful, but I don't much care for the texture of the ricotta cheese, seems a little grainy for my liking. I'll stick to cream cheese and sour cream cheesecakes I think. Are some ricotta's creamier than others?

Oatmeal Peanut Butter Cookies III

I didn't make sandwiches from the cookies, but the cookie part was a bit salty for my liking, perhaps beacause I used salted butter? There was no salt in my peanut butter, I checked. I will half the salt next time. I DID love the texture of these cookies. I want to make the filling next time!

Persimmon Bread I

Nice recipe! I baked mine as muffins and used half unbleached flour and half whole wheat, just a tad dry, but that was my bad. I had 17 muffins and they baked about 18 minutes-next time I'll take them out at 15 minutes.
