Applesauce

I've made this recipe twice and both times the applesauce was great! However, i found that when i used fresh apples picked from our tree, it didn't need any sugar. The second time, i used apples that i had frozen and needed the sugar, but used half of what was recommended. It's an easy recipe and i love it!

Orange Vegetables Soup

To cut down on the prep time, I chose to chop up the squash & pumpkin in large pieces & steam/boil until tender (approx. 15 mins). run under cold water until the pieces can be handled - scoop flesh out as instructed in step 4. (I also find that roasting veg rather than steaming gives the soup an odd after taste, so I avoid it whenever possible.) I didn't have any celery, but the soup tasted fine without it and I added 1/2 cup rather than 1/4 cup of orange juice to mellow the taste a bit. The end result was lovely & this recipe will definately be used again - a great autumn/winter soup!

Banana Cake III

The other day I had a few over ripe bananas in the fruit bowl and went in search for an easy recipe for banana cake - this was it! Buttermilk is hard to find in England and i love that this recipe uses ingredients that i've always got in the cupboard. (I took advice from other reviews and lessened the baking soda to 1 1/2 tsp and added 1/2 tsp of baking powder). The cake was a huge hit with work colleagues!

Eggnog Blend

I tried making eggnog a few years back & it went horribly wrong but this recipe was a huge success. Don't be tempted to speed up the cooking process at the beginning (making the custard). Keep the heat low & stir constantly until it's thickened slightly. I didn't add the ice cream (it was sweet enough without) and used part whole milk & part single cream because we can't get half & half in the UK. I also only used rum as is the tradition back home. It was delicious and everyone loved it - and most of my friends had never tried eggnog before - by far the best eggnog I've had.

Creamy Parsnip With Ginger Soup

It's difficult to find recipes for parsnip soup and this one was lovely! I didn't have cardamom or all spice & I used a bit of fresh ginger root in place of ground ginger but it still tasted it great.

Bok Choy Beef Soup

This had a lovely taste and I will definately make it again. 1/2 tsp of pepper was plenty for taste - it even smelt peppery - rather than 1 tsp. I also reduced the salt to 1/2 tsp to suit my tastes. Finally, I did not add the chile-garlic sauce because my husband doesn't like spicy food, but the flavour was still great.

Sausage Bean Stew

I used uncooked pork sausages and baked the stew in a cassarole dish (uncovered) for approx 40 mins. I also used a bit of mild chili powder and oregano. Will defnately cook this again!

I used 3 cups of sugar instead of 5 and 1 1/2 cups of cider vinegar (because I ran out), but it was still delicious. Highly recommended!

Banana Sour Cream Bread

I liked the cinnamon sugar coating from the pan. The recipe was too large for what I wanted, so divided it in half. I also used a larger loaf pan but cooked it for 1/2 longer, so it was fine.

Best Big, Fat, Chewy Chocolate Chip Cookie

a 1/4 makes about 8-10 large cookies, so I cut these in half - 1 tbsp scoop made the perfect size. They were delicious too & I would be tempted to experiment with 1.5 cups chocolate chips & 1/2 cups chopped hazelnuts.

Pork with Peaches Stir-Fry

Easy and tasty, if not a little on the bland side. I did not include broccoli but used swede (rutabaga) instead. I also used fresh peaches; I added a bit of water and sugar to replace the juice that would have come from the canned peaches.

Chewy Maple Cookies

They're ok, but have a slight after taste from the maple syrup. I substituted oats (1 cup) for the coconut and made some with & some without walnuts - those with walnuts were better.

Black Magic Cake

Amazing! I accidentally used 2 cups of flour but it turned out fine. It was so moist that I had to be careful when taking it out of the pan because it was stuck to the bottom, but otherwise no problems. My husband was sceptical about the coffee, but you can't taste it at all - the best homemade (from scratch) chocolate cake I've had!

While others have said that the cake was too dry, I found that the cake was too dense for my liking - a heavy fudge cake. I cannot comment on the icing because I used a different recipe.

West Coast Cod and Shrimp

I didn't have cream, so used evaporated milk but it worIed just as well. I also cooked uncovered after reading some reviews about it becoming too watery. I thought that this was good but richer than most meals I would eat and my husband didn't like it at all so I've given it 3 out of 5 stars. I probably won't make it again.
