Excellent. A little too spicy for me so I cut the amount of both salsas down. I also left out the onion and added more chicken.

Spinach Chicken Enchiladas

Pretty good. I left out the nutmeg and only put in about half of the spinach it called for. Too mushy otherwise. I also added more chicken. Needs hot sauce/or green sauce when served.

Fast and Delicious Black Bean Soup

Fantastic! I left out the peppers, cumin, and used chicken instead. I don't eat this without sour cream and tortilla chips on top. My husband loves this and he's not a big soup person.
