This was just a perfect recipe for leftover turkey carcass! Followed it exactly except left out one onion. YUM!

Mandarin Almond Salad

Reviewed: Dec. 5, 2008
Excellent recipe for taking to holiday parties or to share with friends. Our friend is diabetic so I just toasted the almonds - no sugar, and they were great. Also had no red wine vinegar so used balsamic instead. Got rave reviews. Definitely will make this again.

Corned Beef and Cabbage II

Reviewed: Mar. 18, 2009
Awesome recipe! Had dinner for three couples and they all raved! Only 2 small pieces left from 5 1/2 pounds of corn beef. As others suggested, used an oven cooking bag and carmelized onions with the cabbage. I don't really like cabbage but had seconds of this recipe. Yum!

Dave's Ultimate Guacamole

Reviewed: May 5, 2009
Great recipe! Was running late, guests were already here - made this in about 5 minutes and everyone raved about it! Couldn't find the hot sauce so just used a bit more salsa. Will make it again.

Loved this! Our company was asking for seconds & it disappeared within 20 minutes! The nuts added a zing to it. Will definitely make this again!

The Best Sweet and Sour Meatballs

Reviewed: Dec. 27, 2009
This was awesome! I did substitute Teriyaki sauce for the soy sauce since I was out. Still great! Since I used elk hamburger I used extra bread crumbs and 2 eggs to keep it together better.

Easy Spicy Chicken and Rice

Reviewed: Jan. 19, 2010
Very simple to make & very tasty! Didn't have tomatoes with chilies so just used diced tomatoes & a small can of green chilies. Took others' advice & added 1/2 cup of sour cream to the mix. YUM!

Poached Salmon II

Reviewed: Feb. 21, 2010
Easy to make. I found that I had to cover the fish while poaching. (Could be because I live at high altitude.) Very tasty.
