Best Blueberry Buckle

Reviewed: May 27, 2013
I made this to take to a potluck and it was great. Chose to make this recipe instead of another because of the smaller amount of sugar in the crumble. Even though I spilled the milk and wasn't sure about the amount I lost (I added what I thought would make up for it). These would probably make great cupcakes.

Fresh Blueberry Pie II

Reviewed: May 31, 2011
This is a nice recipe, but I had to add a lot more blueberries to fill the pie shell because I was using a 9" pie shell. But it seems like the filling as is would still be a little low for an 8" shell if you like a really full pie. After reading the reviews I decided to add a little cinnamon, but I think I'd like it more as it's written. Just remember to add more berries if you're using a bigger pie plate.

Teena's Overnight Southern Buttermilk Biscuits

Reviewed: May 31, 2011
This recipe is amazing. I was afraid I'd over kneaded the dough too much, but they turned out great. I think the sugar gives it a little different taste than I'm used to, but they're very good as is. I think I might try leaving it out the next time I make them.

Blueberry 'S' Pie

Reviewed: Feb. 8, 2011
Pie doesn't get any easier than this. I mean, you don't even have to make a pie dough and roll it out, and I make a good pie dough. But this must have taken me less than 10 minutes to put together. I tried it because I liked the idea of a "healthier" (in my opinion) pie, with the oat meal crust, and it's good. For my purposes and taste however, it was a little too sweet, so I think I'd reduce the sugar in the crust by half next time. I have to cut back on my sugar intake. I also replaced half of the butter with some olive oil (although I used a little less than and half cup, and I used whole wheat flour instead of regular and it turned out fine. Nice recipe. Thanks for the idea.

Killer Artichokes

Reviewed: Oct. 17, 2010
OMG! I think that was the best artichoke I've ever eaten. I broiled mine instead of grilling it, and it was just fine that way, imo. I could have eaten two artichokes by myself.

Coconut Avocado Smoothie

Reviewed: Aug. 30, 2010
This is amazingly good. I've never had an avocado smoothie before, but love avocado so was intrigued when I saw the recipe. It's delicious and not very sweet. I don't like overly sweet things. I made mine w/plain Greek yogurt and 1% milk, and it came out just fine. Thank you to the OP.

Roasted Garlic Cauliflower

Reviewed: Aug. 1, 2010
This is really a delicious recipe. I love cauliflower but basically had only 2 ways to fix it. I love that it also doesn't get mushy and still has bite to it. I had it with steamed rice and the Greek chicken from this website and it was a great meal.

Fresh Strawberry Upside Down Cake

Reviewed: May 19, 2010
This was really good and easy to make. I only gave it 4 stars for 2 reasons. 1 - it really needed more than 2 cups of strawberries, IMO. It needed at least 1 more cup of smashed berries to cover the bottom of the pan, maybe closer to 2 extra cups. I wanted to have plenty of berries. Also, while it's ok with the yellow cake mix, it would really be better with a scratch cake. I hadn't used a box mix in at least 20 years, and there's something in the flavor of yellow cake mixes that I still don't care for. Since I wanted something sweet, really quickly, decided to try it, and it was ok, but still, could be better. I'll try it next time with the cake from another upside down cake recipe. Still a great idea and people really enjoyed it.

I think this must be very good. I took it to an office party and it was all gone before I got to it.

Strawberry Bread

Reviewed: Apr. 11, 2010
This is very good, but as written I think it would be too sweet. It was plenty sweet enough for me w/1.5 cups of sugar. At the advice of others, I doubled the amount of strawberries, added 1 tsp of vanilla, decreased the cinnamon to 1 tsp (A TBSP would overpower the flavor of strawberry IMO), decreased the oil to 2/3-3/4 cup and made the flour about 1/2 whole wheat flour. It's delicious. Thanks for the recipe. I love nuts, but it could do without them and be just fine. I would like an even more strawberry taste. I might even try it w/more strawberries.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Reviewed: Mar. 14, 2010
I usually don't like whole grain/wheat pancakes. They always seem to fall apart and never seem to have a soft, fluffy texture, but these are excellent! I just made them and they're really delicious, soft, fluffy, and not heavy. Mine did just fine with baking soda, fwiw. Thank you for a great recipe.

Whole Wheat Biscuits

Reviewed: Mar. 4, 2010
I just made these and they were excellent. They were very tender. The only problem is that it makes too few biscuits. It only made enough for me. :) OK, I gave my room mate one.

Scottish Shortbread III

Reviewed: Dec. 16, 2006
This is an excellent recipe. I'd lost one that was almost identical and I'm so happy to have found this. The only suggestion I have is that the directions for using your hands to "mix thoroughly" may not be specific enough for some people who don't know that meand that the dough needs to be kneaded for quite several minutes at minimum. I think some of the negatTive reviews probably came about because they didn't mix it well enough. This is a purist's type of shortbread, if that's what you're looking for. I just wanted to add that you should sift the flour first. Otherwise you get a more flour than you need, resulting in a dryer dough, which can lead to a "flour-y" taste, even with kneading. If you don't sift the flour first, then you definitely need to add less flour, maybe 1/4-1/3 cup less.
