Baby Spinach Omelet

This was so good! I didn't have onion powder so i used the flesh/juice from a green onion. Very tasty! Would have taken a picture, but the smell was so good I gobbled it up quickly...

French Toast I

Thank you for the recipe. I used nutmeg, cinnamon and a bit of splenda. Next time i will try vanilla but i didn't have any this time.

White Chocolate, Chocolate Cookies

These were delicious. The only bad thing is that I modified the recipe and only made a dozen!!!! I added in a teaspoon of vanilla, dash of baking powder along with the baking soda and will certainly make these again!

Firecracker Grilled Alaska Salmon

I have made this recipe at least a dozen times - which says a lot for how good this recipe is. I usually make things a handful of times. Plus my mom asked for the recipe - which certainly put a smile on my face. I have left out the green onions a few times - mainly because I have everything else on hand and just stop in the supermarket to pick up the salmon. Also - this is the only way I will eat salmon - unless it's on a bagel. I won't touch the stuff in a restaurant.

Key West Penne

Very, very good. I did use some cornstarch to thicken it up, but other then that and some garlic and salt and pepper I made as is. I was very impressed with the taste and will most certainly make again.

Brazilian Lemonade

I made this and it's a definite keeper. I did make a little extra and added in some more ice and condensed milk and the tartness went down a notch. Certainly a drink to make again and again.

Coconut Curry Tofu

Very tasty dish, that I found needed only half of the chili paste and extra garlic. All of the ingredients turned out delicious over Jasmine rice. I did press the water out of the tofu and pan fry with peanut oil and garlic.

Mini Corncakes with Basil, Avocado Spread and Smoked Salmon

I made this for an appetizer tonight with our meal. It was so tasty. I thought the corncakes were going to be a bit crisper, but they were very moist and delicious. When eating it's important to get that 'perfect' bite of salmon, cake and avocado. I only had to use one avocado and every thing else stayed the same for ingredients. I kept all the ingredients pretty much the same with the addition of a bit more milk in mixing the corn in step one. Oh i had thought about adding in some sugar since that's how I take my cornbread usually, but I'm glad I didn't. Recipe is perfect as is! Thanks!

Linguine with Cajun-Spiced Shrimp and Corn

This was delicious - I omitted the red bell pepper as I had none on hand. I would make this again, but I think the sauce was not enough for that much linguine so I'd double the sauce and leave everything else as is.

Seafood Scampi Linguine

So tasty. I followed the directions with a few changes - i left out the clams and used a lawrys bell pepper and pepper seasoning i had to flavor the zucchini. I did use the oven and oh the taste of the zucchini and dish was so delicious. I also added about 4 teaspoons of caper juice. Slightly salty taste, but it added a true depth to the dish that I will want to recreate many times over. oh if i had a suggestion it would be to double the amount of zucchini and use 1/4 inch thickness when slicing.

My Crab Cakes

Very tasty. I baked in the oven and put the bread crumbs in the bottom of the muffin dishes. Thanks to the person who made the suggestion. Also I left out the cayenne and garlic powder. Just added the old bay and it was very tasty.

Bruschetta with Roasted Sweet Red Peppers

I used the directions on this site to make my own roasted sweet red peppers. http://allrecipes.com/HowTo/roasting-peppers/detail.aspx I used both red and yellow peppers. I did use the onion, but forgot about the onion. Very tasty and my bf went back for seconds.

Scallop Pesto Pasta

I think the pesto really makes this recipe - I did add in some nutmeg and red pepper flakes to the flour mixture, other than that I followed recipe to a T. All in all pretty tasty and unique flavor. I made this with a pecan pesto and it was very delicious.

Pecan Pie V

I made this pie for Thanksgiving today and everyone really loved it. I made this and the apple crumble pie also found on this site and people thought I bought them both! A true compliment if you ask me! I did use pecan halves as opposed to pieces, but otherwise I made the recipe as written. Thanks Elaine - you made me into a pie baking star!

I read the reviews and made this with white and brown sugar and dusted the apples with flour and nutmeg in addition, to the cinnamon. Truly delicious! And I used a whole stick of butter in the crumble topping- truly delicious!

Strawberry and Mandarin Salad

If I was going to open a restaurant - I'd have this recipe on the menu. My restaurant would be similar to Blossom in NYC, and would have only the best vegetarian and vegan recipes. I would use a bit less oil, but that seems to be a problem I've been having lately. Maybe I just need a higher quality EVOO. Whatever the case - don't hesitate - make this salad today!

Pork Lo Mein

Very good. We used fried tofu instead of pork and added in soy paste to the mixture. We grilled the veggies and tofu and added in the noodles and some sesame oil. This was very good and I must admit better then my bf's favorite restaurant. We will make this again and again and thank you for the recipe.
