Spicy Baked Sweet Potato Fries

Very tasty - I added in some extra seasonings - brown sugar, onion powder, paprika and cajun seasoning. I will make these again for sure.

Japanese Zucchini and Onions

Spinach and Mushroom Quesadillas

The quesadillas were okay albeit a bit bland. I served with salsa, but the filling needed a bit more oomph so the second go around I added a diced jalepeno, black beans and topped with sour cream, guacamole and salsa. I am a vegetarian and find the tastes to mix together well. Much better mhhmmm...

Linguine with Cajun-Spiced Shrimp and Corn

This was delicious - I omitted the red bell pepper as I had none on hand. I would make this again, but I think the sauce was not enough for that much linguine so I'd double the sauce and leave everything else as is.

Sweet Potato and Black Bean Chili

I followed the recipe to a 't' and also made some rice to go along with it. While the dish tasted fine, and I had enough for leftovers I won't make again. The level of effort (chopping) and all of the ingredients I had to source left me wanting more. If you have all the ingredients on hand - try it, but I wouldn't make a special trip to the store just to pick up the ingredients for this dish. Sorry :(

Artichoke and Shrimp Linguine

Wow! This was simple to prepare, yet so delicious you would think it took me awhile to make. I made just a few mods - left out the Parmesan and added some lemon pepper seasoning to the final product - oh and I added a bit of butter to my sauteed shrimp for a bit more flavor. I think really small mods - but this dish was a hit and a certain keeper!!! Thanks Rentsch!

Diablo Shrimp

Made this for dinner tonight and it was fantastic. I followed the recipe exactly, up until adding in the pasta. I added in a bit of cornstarch to thicken the sauce. I did remove the seeds from the jalapenos prior to adding them into the butter/olive oil mixture and I think this kept the hotness to a minimum. If you remove the seeds you are probably safe to leave the jalapenos in. I did remove the peppers, but served them alongside the meal and they were gobbled up along with the entire dish. Will certainly make this again - Matty1124 thanks for the new recipe! One last dish - this was so easy to make and kitchen clean-up was super easy!

Honey Lime Tilapia

This was a very tasty dish and we enjoyed it a great bit. I marinated the fish overnight and the flavor was more intense then the original time I made the dish earlier this month. Marinating the fish and cooking it in an individual tin foil packet worked wonders. I made the veggies seperate although and added in green and red peppers, red onions and salt and pepper drizzled in olive oil. Very good and even my bf who usually only likes to eat red meat went back for seconds.

Mini Corncakes with Basil, Avocado Spread and Smoked Salmon

I made this for an appetizer tonight with our meal. It was so tasty. I thought the corncakes were going to be a bit crisper, but they were very moist and delicious. When eating it's important to get that 'perfect' bite of salmon, cake and avocado. I only had to use one avocado and every thing else stayed the same for ingredients. I kept all the ingredients pretty much the same with the addition of a bit more milk in mixing the corn in step one. Oh i had thought about adding in some sugar since that's how I take my cornbread usually, but I'm glad I didn't. Recipe is perfect as is! Thanks!

My Crab Cakes

Very tasty. I baked in the oven and put the bread crumbs in the bottom of the muffin dishes. Thanks to the person who made the suggestion. Also I left out the cayenne and garlic powder. Just added the old bay and it was very tasty.

Veggie Lo Mein

This dish was quite tasty. We added a bit more soy sauce, and also soy paste and sesame oil (available at Asian Grocers). We also added fried tofu, green onions and a can of water chestnuts. This dish was so yummy that we will add this to our monthly menu. I am sure the dish would be great as is, but we just wanted to add a few more items. BTW the amount of spice was just right. A bit of heat, but not too much.

Coconut Cupcakes

Thank you for the recipe Jessica. The cooking time can certainly be increased, but it is normal that different ovens have different baking temperatures. I used coconut oil in place of the applesauce and the butter - because I didn't have any applesauce and prefer coconut oil to all other oils when baking or cooking. A nice frosting that I tried out recently that is great on the cupcakes - is 1 cup coconut oil, 3 cups powdered sugar, 5 teaspoons coconut milk. Whip it up (I just used a fork and didn't bust out the electric mixer, but sure that works too) and spread on the cupcakes - will intensify the tasty coconut flavor even more.

Baked Whole Cauliflower

Let's just say I love this recipe and leave it at that! I've made this recipe 4-5x which is many times. I tried to cut the cauliflower into smaller pieces, but it's a bit messier. The more 'topping' the better and you will turn non-believers into cauliflower lovers!

Pecan Pie V

I made this pie for Thanksgiving today and everyone really loved it. I made this and the apple crumble pie also found on this site and people thought I bought them both! A true compliment if you ask me! I did use pecan halves as opposed to pieces, but otherwise I made the recipe as written. Thanks Elaine - you made me into a pie baking star!

Seafood Scampi Linguine

So tasty. I followed the directions with a few changes - i left out the clams and used a lawrys bell pepper and pepper seasoning i had to flavor the zucchini. I did use the oven and oh the taste of the zucchini and dish was so delicious. I also added about 4 teaspoons of caper juice. Slightly salty taste, but it added a true depth to the dish that I will want to recreate many times over. oh if i had a suggestion it would be to double the amount of zucchini and use 1/4 inch thickness when slicing.

Black Bean Breakfast Bowl

Fast and tasty. Cooked the black beans for five minutes on the stove and added in fresh cilantro. This would make a great breakfast, but I think it made an even butter lunch. Thanks Matt!

Strawberry and Mandarin Salad

If I was going to open a restaurant - I'd have this recipe on the menu. My restaurant would be similar to Blossom in NYC, and would have only the best vegetarian and vegan recipes. I would use a bit less oil, but that seems to be a problem I've been having lately. Maybe I just need a higher quality EVOO. Whatever the case - don't hesitate - make this salad today!

Apple Crumble Pie

I read the reviews and made this with white and brown sugar and dusted the apples with flour and nutmeg in addition, to the cinnamon. Truly delicious! And I used a whole stick of butter in the crumble topping- truly delicious!

Aunt Mary's Eggplant Balls

Just made these as burgers for lunch. They taste okay, but it's missing something. I tried strawberry jam and then hot sauce, but it just didn't work with either. I will not be making these again, unless I was in the mood for spaghetti and had some tasty spaghetti sauce to use atop.
