Shrimp and Okra Gumbo

Came home very tiring day looked in the kitchen and decided I had the ingredients to make my fiance this gumbo although not many shrimp were harmed in the making of this shrimp. Used a variety of spices including black pepper, white pepper, garlic powder, fresh garlic, cajun seasoning, cayenne pepper, paprika and served with a side of cornbread and rice. A def. keeper and will make again.

Amusement Park Cornbread

In my experience twenty minutes is NO Where near enough time to bake this. I'm now left with a very dirty, burnt oven and a hmmmm campfire smelling kitchen from taking this out and seeing the still liquid inside slosh out of the pan and drip all over the oven. Putting it back in for 15 additional minutes and will use the toothpick test to ensure it's actually baked through when I take out of oven for attempt#2. I sure hope this tastes good, because cleaning the oven is not one of my favorite tasks.

Amazin' Crab Rice Cakes

It was okay, but not a keeper for us. I think the main thing is - the ingredients are similar to crab fried rice and we both prefer that taste to this one.

Kale Chips with Honey

Spicy Eggplant

I love to order eggplant when I go out and this is a great recipe that I can now make at home. I followed the instructions making only a few slight modifications - I added in a splash of rice wine vinegar, brown sugar instead of white, a teaspoon of teriyaki sauce and a sprinkle of ginger. Also, I left out the sesame oil and sprinkled toasted sesame seeds on the top. I served alongside sticky rice, broccoli, and prawns made simply with butter and lemon. I will certainly make this dish again and found the inclusion of Japanese eggplant versus the standard variety larger headed eggplant to be the key.

Black Bean Breakfast Bowl

Fast and tasty. Cooked the black beans for five minutes on the stove and added in fresh cilantro. This would make a great breakfast, but I think it made an even butter lunch. Thanks Matt!

Fried Cabbage Texas Style

Easy to make your own cornbread mix with equal parts cornmeal and flour - a smidge of salt and sugar and double that amount with baking powder. I didn't use bacon so instead I browned the onions and fresh garlic in 1/2 stick a butter (gluttonous but tasty). I'll certainly make this again and thanks ChiliTex for the recipe!

Shrimp Cakes

Made these for dinner tonight. Pared down to two servings (mistake #1) and baked in the oven. Mistake #2 was using too much olive oil in the oven - should have just greased the pan. The flavor was delicious and I'll make again.

White Chocolate, Chocolate Cookies

These were delicious. The only bad thing is that I modified the recipe and only made a dozen!!!! I added in a teaspoon of vanilla, dash of baking powder along with the baking soda and will certainly make these again!

Spicy Garlic and Pepper Shrimp

This was easy to prepare and tasted great. I used a whole head/bunch of napa cabbage and 1/2 dozen shrimp. Served over rice and it was enough for DH and I to have leftovers. I wouldn't recommend making more than you will eat at one setting because I don't think this is a good leftovers type of dish. I added in powdered ginger and peanut oil to the cabbage and it was delicious. Also it is important to add water to the shrimp when cooking to ensure they remain juicy and succulent. I like others didn't use as much red pepper as called for in the recipe, but I did let DH sprinkle in the amount he preferred while I cooked. He really likes red pepper and still he didn't reach the 2 teaspoons called for in the original recipe.

Garlic Cheese Grits with Shrimp

This was great. I took a few of the suggestions and left out the processed cheese and instead used cheddar cheese. I added in powdered garlic when cooking the grits (very slow with 2 parts water and 2 parts heavy whipping cream to 1 part grits). I also added in about a teaspoon of cayenne because I like heat in my food. Last I only used one tomato and prior to adding the shrimp I sauteed five heads of garlic. I'll make this again for sure - it was delicious.

Diablo Shrimp

Made this for dinner tonight and it was fantastic. I followed the recipe exactly, up until adding in the pasta. I added in a bit of cornstarch to thicken the sauce. I did remove the seeds from the jalapenos prior to adding them into the butter/olive oil mixture and I think this kept the hotness to a minimum. If you remove the seeds you are probably safe to leave the jalapenos in. I did remove the peppers, but served them alongside the meal and they were gobbled up along with the entire dish. Will certainly make this again - Matty1124 thanks for the new recipe! One last dish - this was so easy to make and kitchen clean-up was super easy!

Pineapple Upside Down Cupcakes

I made 12 cupcakes and a small cake with the rest of the batter. This tasted just okay, the one positive I can say is that it was moist. Tasted like pineapples, but with pineapple mix, juice and pineapple pieces - not sure what else it should have tasted like. I won't make again, because I think a better recipe must be out there.

Sweet Potato and Black Bean Chili

I followed the recipe to a 't' and also made some rice to go along with it. While the dish tasted fine, and I had enough for leftovers I won't make again. The level of effort (chopping) and all of the ingredients I had to source left me wanting more. If you have all the ingredients on hand - try it, but I wouldn't make a special trip to the store just to pick up the ingredients for this dish. Sorry :(

Baked Whole Cauliflower

Let's just say I love this recipe and leave it at that! I've made this recipe 4-5x which is many times. I tried to cut the cauliflower into smaller pieces, but it's a bit messier. The more 'topping' the better and you will turn non-believers into cauliflower lovers!
