Mel's Crab Salad
I've made this twice in 4 days, it was that good! I followed the recipe exact and it was really good. The next time I made a few changes based on other reviews and a few of my own and somehow it was even better! I scaled the mayo back to 1/4 cup (used Hellman's light) and also added about 1/8 cup of light sour cream. I used about 2 tsp of parsley and 3/4 cup celery. I added a couple dashes of cayenne pepper and about 1/8 cup shredded mild cheddar cheese. The sour cream subdued the mayo flavor a bit which I prefer. The cayenne and small amount of cheese gave it a nice little kick. Follow the recipe to a T or make some small tweaks to suit your tastes like I did, either way its delicious!!

Szechwan Shrimp
This is my go to recipe for Chinese at home! In fact, it is better than any takeout! I double the sauce and add my favorite vegetables, all of which I cook separately (broccoli, peppers, onion, water chestnuts, mushrooms, etc.). This really is best with raw shrimp. I cook all the vegetables first and remove them, cover to keep warm, and set aside. Then I cook as directed and add the vegetables and sauce when the shrimp is "just done" and cooks as directed until thickened. I serve with rice. So delicious!!

Southwestern Egg Rolls
I love this recipe and make it often. It is a bit of work but it is worth it. I recently made it for some friends and they were fighting over the last one! I've tried several variations to this, and the original in my opinion is the best. I've tried the baking and while they are good, they are not near as tasty as the deep fried version. I even did a side by side comparison, and the deep fried won hands down. But if you are watching calories, the baked version is still good. I also tried the freezing vs. no freeze and when deep frying, even with them secured with toothpicks the ones I didn't freeze came open during the fry. I serve these with a quick mixed avocado dip (smashed avocados, sour cream, chopped tomato, onions, jalapeno, and cilantro). They are so good and so worth the effort.
