About this Cook
My favorite things to cook
My favorite way to cook is to try and invent something with what I have on hand before running off to the store..You'd be surprised the combinations that are possible! I dont bake much or cook a lot of sweets..I prefer a hearty meal! However, I have been told I make delicious potato salad, spaghetti, black bean soup...almost anything I put my mind to!
My favorite family cooking traditions
I've been told that I am exactly like my great-grandmother Sallie who could never let someone set foot in the house without feeding them! If you come over around meal time, you might as well count on eating because you have no choice! Although I never knew her when she was healthy enough to be up and about, I love that this part of her lived on through me.
My cooking triumphs
My 6'3" fiancee has a huge appetite and descriminating far, I have never made a meal he doesnt love! My boss actually pays me to cook healthy lunches to bring because she hates "diet food" but loves my healthy, savory meals!
My cooking tragedies
One fateful first date, I attempted fettucine alfredo for the first time..bad combo! The sauce seperated and was a bit grainy because the parm never really melted. It was so awkward because we didnt know eachother that well yet and, although the sauce TASTED fine, the texture was just WRONG! I'm proud to say that I have finally mastered alfredo now!

Cornish Game Hens with Garlic and Rosemary
This was a hit with my family...moist and delicious. I modified the recipe slightly. I put the broth and vinegar in the roasting pan from the beginning. The birds actually sat in it like a marinade, in the fridge, for a few hours before cooking. I also added a clove of garlic in the cavity along with the lemon and rosemary. I cooked it for an hour and a half based on other reviews. It was excellent!

Basil Parmesan Spread
This dip was the hit of the party...i was worried about the presentation but it came out perfectly! i had no sun dried tomato paste so i took a jar of sun-dried tomatoes and some tomato paste and put it through the food processor. Thank you so much for sharing!

Cajun Seafood Pasta
i must admit that i forgot to bring the recipe on my trip and had to guess and adjust ingredient amounts to taste--but what a dish! made it for a group of friends at the beach and it was such a hit! to make the sauce go further for less money, i also added some shredded imitation crab meat which made the sauce nice and chunky! i will make again and again--thank you!
