Spring Strawberry Salad with Chicken

My husbanmd loves this salad! I make my own balsamic dressing by putting balsamic, a little dijon mustard and a little honey in a sauce pan and reducing it till it's dressing thickness.

Sooooo good with a few changes. Instead of boiling the water with sugar, I boiled store bought orange juice. I did not push the cloves into an orange peel, I just threw them in at the same time as the cinnamon stick. After 30 minutes I added the wine and then I added more sugar, orange juice and water to taste.

Marinated Grilled Shrimp

I like to double the vinegas and add some brown sugar. Instead of cayenne pepper I like to use siracha hot sauce. The fresh basil really makes the recipe!

Moroccan-Style Stuffed Acorn Squash

Delicious, although, I changed it alot. For fruit and veggis I used apple, red onion and carrots and used the garbonzo beans. I sauteed those in olive oil and added garlic, cumin, some coriander and a little bit of cinnamon. Then added the broth and couscous. So Good!

Green Sauce Enchiladas

I made it with mexican rice instead of white, used more green sauce, shredded 3 cheese instead of cubes and added black beans. After all that, it came out pretty good. I would make it again.

Got mixed reviews on these. If you don't want them too spicy, cut down on the chipotles and use more adobo sauch instead.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Everyone loved these and can't wait to eat them again. I used corn meal and flax meal to bread and fry the fish. I mixed chopped cilantro in with the sweet lime dressing and mixed that in with the cole slaw. For the mayo sauce I did not use any cayenne pepper and it came out just the right amount of hot.
