Melt In Your Mouth Toffee

Reviewed: May 11, 2013
YUMMMMMMM!! I had to turn the heat to low on my stove to keep it from burning, but once I figured that out (3 tries...I was determined!!), it's the only "candy bar" that my son wants! Thank you!!

Cheesy Potato and Corn Chowder

Reviewed: May 2, 2013
YUMMMM! I added pepper jack cheese as someone mentioned in the reviews instead of the processed cheese and I didn't have any gravy mix, so I added 2T of rice flour (suggested, too). I also added a few filets of leftover walleye and this chowder is amazing!! Thank you for the recipe!! Will definitely make again.

Ham and Noodle Casserole

Reviewed: Apr. 1, 2013
Thank you! This was great and my family said, "Make again!" Couple of things I did - sauteed the onions before hand as someone had mentioned, subbed plain Greek yogurt for sour cream, added stuffing mix to the top during the last 5 minutes of cooking, and added the leftover corn from dinner yesterday. I cooked it covered and took the lid off during the last 5 minutes. Definitely will make again!!

Delicious...especially with home made honey mustard sauce!!! (just read the reviews and should have done that first...regarding the soggy: bake them on parchment paper and there won't be a single soggy one)

Amazing 'Pizza' Pork Chops

Reviewed: Jul. 29, 2011
These pork chops were excellent!! My grill died and I didn't have fresh herbs. . .so here is what I needed to do that was different. I sliced the tomatoes (Romas in 1/4" slices lengthwise) and let them sit in the marinade of 1 T dried basil, 1 t dried oregano, 1 t minced garlic, and 2 T olive oil while I broiled the pork chops until they were 165 internal temp. I then put the marinated tomatoes on the pork chops (2 slices per pork chop), split the remaining marinade between all of the chops, and topped them with a slice of mozzarella. They went back to the broiler until the cheese was melted and bubbly. I'm sorry for tweaking the recipe with just the dried herbs and broiling. . .grilling and fresh would be more than I could imagine! :o) Can't wait to try them again and thank you for your amazing recipe!!

Baja Grilled Chicken Wrap

Reviewed: Jul. 17, 2011
This was WONDERFUL!! A couple of things. . .our grill died, so I tried the broiler option. Put a tortilla shell under a HI Broiler temp for about 30 seconds, or until darker brown spots appear. Flip it over and put some cheese on the non-toasted side. Add the serving of chicken ingredients, spread it to within a couple of inches on 3 sides, and sprinkle more cheese on the top. Put it back under the broiler until the cheese melts. . .WATCH IT! Fold it bottom first then sides and secure with a toothpick. I would bet that the grill is even better, but without one, it's a keeper, too! Thank you for sharing!

Mexican Rice II

Reviewed: May 15, 2011
I've never browned or puffed rice, and it really worked!! I used Uncle Ben's Whole Grain Fast and Natural Rice (whole grain parboiled brown rice is the only ingredient) and olive oil on medium low heat in a sauce pan (no lid to cover for my skillet). It took a little while, kind of like popcorn, but it was obvious when the rice "puffed". After adding the other ingredients and bringing to a boil, cook time was only about 10 more minutes. Watch it, because it will stick to the bottom of the pan otherwise. Yummy! It's on my make again list!! Thank you!

Bella's Rosemary Red Potatoes

Reviewed: Apr. 17, 2011
I had some fresh asparagus that I needed to use, so I did and the veggies were delicious! I used another's suggestion and put everything into a plastic bag to mix and coat and it worked great. . .no mess!! Also, I have let fresh herbs intimidate me (really?!?!?) because I wasn't sure if I would be using them correctly. I took the plunge and used fresh rosemary and I didn't wreck anything!! Woohoo! It was yummy!!

Four Cheese Macaroni

Reviewed: Dec. 31, 2010
I have an impatient family when it comes to mac and cheese, so minimal changes were made. (didn't need the vegetable oil, 5T of butter, or the beaten eggs; substituted 6 Babybel Gouda for the processed cheese) 4 T butter melted; add 4 T flour (wheat, brown rice, white. . .all work) to make a rue. Added the 1/2 and 1/2 until thickened and then added the cheeses until melted. I did this while the noodles were cooking. Mixed everything together and served. YUMMY!! I apologize for tweaking your recipe, but we couldn't wait to eat it!! Thank you!
