Cottage Cheese Roast

This is really good! Husband really loved it. We didn't expect it to be like ground beef meatloaf, but it is reminiscent (probably more so for those of us who have been vegetarians for a while). Next time I'll try it with half the oil and no nuts. Very good with mushroom gravy and mashed potatoes! Try it!!

Tennessee Rubdown

Really, really good! Tried it on spareribs, and they came out just like the best Tennessee BBQ! Needs no "tweaking", perfect as submitted. Thanks for this one, it's a keeper!

Ripe Olive Potato Salad

This was really quite good. I'll make it again, but maybe with less dill, or maybe a different herb that will compliment the really yummy honey-mustard dressing. Thank you for submitting this low-fat, no mayo recipe. My husband and I both enjoyed it!

Fish Tacos

Wonderful! I usually don't change recipes before reviewing, but, because we're on a lowfat diet, i brushed some of the sauce on fillets and grilled them, and softened the tortillas in a hot, dry frying pan. Also used lowfat mayo and nonfat yogurt. I'm sure they are fabulous as prepared in the recipe, but even with the lowfat alternatives, my husband and I both went bonkers over these. Thanks for a new and exciting way to serve fresh fish. My husband says he will catch more, and fillet them all, just to have these tacos again!

Lamb Tagine

very, very good! the meat is quite tender, spicy but not too hot. i've tried this recipe with lamb and with pork, both were excellent. no need to alter the spices, and seems to come out fine if you're missing one or two of the hard-to-find ones. put crushed peppers or cayenne on the table for those who want more heat. in the unlikely event that you have leftovers, heat 'em up and serve on hoagie rolls. yumm. thank you for this one, it's a keeper!

Portuguese Sweet Rice

A lovely basic rice pudding! Cook it slowly so the rice soaks up a lot of milk. I tried it with jasmine rice, added a tad of vanilla extract and cinnamon on top. Be patient with the cooking and you'll be rewarded!

Two Ingredient Pumpkin Cake

I made this with home-cooked pumpkin, which may be moister than canned pumpkin, so didn't need to add anything to the batter. The cake was lovely with a little glaze. Tried it again using home-cooked butternut squash, again with excellent results. Thanks for this recipe!
