Amish Sugar Cookies

I've made this recipe every christmas since 1995 with a few changes; I use clear vanilla, and I separate the dough into four sections and chill until it is stiff enough to roll into balls, then stick the bottom of a chilled glass into sugar (or colored sugar!) to flatten the balls. The cookies "grow" alot on the cookie sheet, so give them plenty of room. The cookies travel well in cookie tins, and keep their fresh taste for weeks. I highly reccomend this recipe!

Double Chocolate Chip Cookies with Peppermint

I changed this recipe a little, I used 1 cup of those new peppermint chips available in the baking aisle and 1.5 cups of milk choc chips in place of the 2 c semi-sweet and .5 cup of soft peppermint candy, all other ingredients remain the same. The cookies are fabulous and I will probably have to make more than one batch! Didn't run at all!
