Coconut Macaroons
Fabulous recipe! I brought these to a cookie swap a few years ago and am always asked to bring them again! Like others, I use parchment paper to line the cookie sheets; I re-use the same paper for the entire batch of cookies. Also, I use a small, rounded scoop to put the cookies on the paper. They pretty much retain their shape while baking and this ensures moist, chewy macaroons. As a special treat, I press an unwrapped Hershey's Kiss into the macaroon when they are fresh out of the oven (before removing from the cookie sheet), then I move them to a rack to cool. When they cool, it is a chocolate / coconut sensation!!

Best Ever Blueberry Cobbler
Easy and delicious!! A huge hit with my family! The first time I made it, I misread the ingredients and used 1/2 a stick of butter instead of 1/2 a cup. It tasted delicious, but the batter was thicker and more difficult to spread. I rarely tinker with recipes, but did make one change; I added 1/2 tsp of orange peel to the blueberries and 1/2 tsp orange peel to the batter (going for the blueberry citrus flavor). It was yummy! Next time I plan to substitute orange or lemon flavor for the vanilla.

Easy Pumpkin Muffins
I make these as mini-muffins for my kids to bring to school parties. Kids and parents gobble them up and everyone asks for the recipe. The batter is dense, but I use a cookie scoop to fill the muffin tins.
