About this Cook
I am 28. I teach sixth grade here in Bethel, Alaska. I LOVE my job! It is really the funnest job in the world! My husband and I moved up here from Minnesota three years ago and really enjoy it. We have three dogs, and I have three birds in my classroom. Life is incredibly exciting if you let it. I am pretty active in my church. I am really starting to gain confidence and skill in my cooking. I have been a pretty good baker for quite some time. I love this website to help me broaden my horizons!
My favorite things to cook
I LOVE breads of all kinds. I am really trying hard to make healthy/whole wheat things. I love to bake fancy items. My favorite is probably working with fruit desserts. It just seems to be my passion. My husband encourages me strongly to make a lot of Mexican, esp my enchiladas! I make something called Knoephla (German, sort of like spaetzle) for friends and family.
My favorite family cooking traditions
I grew up in rural North Dakota. Farming is in my family everywhere! We had a lot of Knoephla growing up. We didn't have much money, and knoephla is pretty cheap to make! I remember all of us standing around the counters, mixing up the dough and laughing and sharing. I loved to pick up a big goo of dough with my hands and scrape finger-sized portions into the boiling water. I loved to scrape the boiled dough into a frying pan and hear it sizzle! I love to steal (still) pieces of the crispy dough while cooking the rest of the meal!
My cooking triumphs
I made taqueria style tacos (off of this website) and it was AMAZING! I bought 3.5 pounds of rump roast (because we don't carry the called for meat) and all the food WAS GONE! We only had four people to eat all that food and it disappeared! I then made a three-tier ice cream cake that looked pretty impressive (if I do say so myself!) and it was also good!
My cooking tragedies
I once tried to make mac and cheese with real cheese. Doesn't sound terrible until you learn that I used Pepper Jack cheese. It was AWFUL! Even my dogs wouldn't eat it. When they won't take more than a bite, it is REALLY bad! We still call it the Pepper Jack Mac and Cheese Incident.

Poblano Chile Enchiladas a la Gringa
This is fabulous! I don't like corn tortillas, so I used flour. I put cilantro in the sauce as well like others had suggested. I dunked both sides in the sauce and then put chicken and mozz and monterray cheese in the middle. I then wrapped it up and poured the rest of the sauce over the top and baked it. I found that 350 for 15 minutes wasn't long enough so I increased it to 400 until it the cheese was bubbling. This is SUPER delicious especially when PIPING hot! I will be making this again! YUM!!!

Apple Snack Squares
Absolutely fabulous. I decreased the sugar like others did and accidentally put in an extra cup of apples. It was still delicious! It is moist and delicious and the pan is almost gone in the first four hours! Will definitely be making this again!

Cheesy Potato and Corn Chowder
This is a very good recipe, but my husband kept commenting that it was missing something. I have to agree with him. I think it would taste out of this world with something like ham or chicken. I threw some dumplings on top and used cheddar instead of Velveeta. It is VERY good and very hearty.
