Cornbread Muffins I

I just baked 3 different corn muffin recipes from this website, and compared to the other 2 recipes and compared to my normal recipe, this recipe is a big disappointment. These muffins are way too sweet, and have an aftertaste like shortbread (because of the butter and sugar combination). They're not what cornbread should be (in my opinion), although they have a lot of flavor. They did have a good texture inside, and did rise nicely though.

Krissy's Best Ever Corn Muffins

Basic Corn Muffins

I just baked 3 different corn muffin recipes from this website, and these came out the best compared to the other 2 recipes. These muffins have good flavor, rise nicely, and have a nice moist texture inside. However, I find them a touch too sweet, and would like to try making them with less sugar next time.

Cornbread Muffins II

I just baked 3 different corn muffin recipes from this website, and compared to the other 2 recipes and compared to my normal recipe, this recipe is a disappointment. These muffins simply lack flavor. And they don't rise very high, even though they do have a pretty good texture inside. These corn muffins are not sweet at all (and neither are my normal corn muffins), but unless you're eating them with something very flavorful, they are pretty bland. When they are first mixed, the batter is pretty runny, but thickens up in a minute or two (so don't worry). I'm going to have to keep looking for the ultimate recipe.

Cute Kitty Cookies

These baked up perfectly, came out exactly as pictured, and were fairly easy to make. However, they are a little heavy - next time I would make them less than 1/2 inch thick. They taste "just okay" - I think kids would want them a little sweeter. Next time I'm going to use some brown sugar, use all butter instead of shortening, and use less oatmeal. Also when I stored my dough in the fridge, it went flat on one side. Next time I'll put it in a tall glass or tube while it chills, so it will stay round. They are really cute - I made some for the staff at the veterinarian's office as a Christmas thank-you, and they were really impressed.
