Easy Oatmeal Muffins

Reviewed: Sep. 8, 2007
so good! I didn't change much because I wanted a simple, sweet (but somewhat nutrient!) muffin to go with my stew. I ground the oats for a smoother texture, added ground flax seed, and cinnamon. Easy, fast, and VERY yummy...doesn't need anything else!

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Mar. 1, 2008
I used canned cranberry sauce instead of the the jam (needing to use up the contents of my pantry!) Very Good! No leftovers! I served them warm with vanilla ice cream to top it off! I used whole wheat flour and used 1/4 cup honey instead of the sugar.

Curried Honey Mustard Chicken

Reviewed: Jun. 11, 2008
Sooo yummy! I used frozen chicken breast, cut it up, threw everything in a skillet, cooked it on low - perfection over rice! used regular yellow mustdard, added turmeric, black pepper, extra cayanne. **curry, and turmic are cancer fighters and black pepper helps your body digest it, this recipe has all three!**

great healthy snack. Make sure they are cooked the full time, otherwise they're chewy.

Mini Meatloaves

I had to cook it a bit longer (you know how it goes sometimes...) as I have a screaming baby. ;) But it still came out moist and delish! Even the leftovers where superb.

DRY. I added 1/2 cup extra liquid, but it was still a little dry. It was still tasty though!

Chicken Breasts in Caper Cream Sauce

Reviewed: Aug. 11, 2011
So Salty!! I will cut all the seasons in half next time. (I used peas instead of capers - can't imagine how much more flavor with capers!) Too much sodium and flavor for us. I can imagine a great dish otherwise.

Slow Cooker Cilantro Lime Chicken

Reviewed: Oct. 3, 2011
I don't know how this got such high ratings. Maybe I'm used to adding seasons instead of a "jar of salsa"...although the later sounds much easier! I was hoping to be very pleased. Instead, wishing I did my own thing with the chicken. It was tangy, in a weird way. Not a fan!!

great dish and came out looking just like the picture posted. We will do this again! I used low fat coconut milk, and one can of tomato paste, otherwise followed this to a "T". Came out spicier than we thought it would be - good stuff!
