Favorite Banana Blueberry Quick Bread

Oh my - this is definitely a keeper. Unbelievable flavor, very moist, not too dense - simply wonderful! I made a few changes: 1. used canola oil instead of butter, 2. used 1 cup fresh blueberries instead of frozen ones, 3. Omitted the nuts, 4. used 3/4 cup turbinado sugar instead of white sugar, and 5. added 1tsp cinnamon and 1/4 tsp allspice. I chose to make muffins which took about 25 minutes to bake and came out nice and brown and oh-so-tasty!

Gumbo Style Chicken Creole

This was yummy! I left in the mushrooms (omitted the green pepper) and per other suggestions added celery and some dried thyme, along with red pepper flakes to give it a nice kick (instead of the hot sauce), and lastly added about 1/2 can of chicken stock. Definitely a keeper - thank you!

Slow Cooker Chicken Taco Soup

This was delicious! With the exception of a few small changes, I followed the recipe to a T, and everyone came back for seconds (which is always a good sign, right?). The chicken was so tender, it just fell apart. My changes include: 1. Adding another chicken breast since we served a big group of people 2. Used 4oz beer, and 8 oz chicken stock 3. Added 1tsp garlic powder and 1/2 tsp cumin as per another user's suggestion. I left it in the crock pot for about 11 hours total, and loved the result. Thank you for a great recipe!

Indian Tomato Chicken

This recipe was really delicious and easy to make. I cubed chicken breasts into smaller pieces and it cooked for about an hour and was tender and so fragrant. The entire house smelled wonderful. This just might become a staple in our house - thank you for the recipe!

Split Pea Soup

Delicious! I doubled the recipe (makes a LOT of soup) and used one packet each of split peas and beans, and used cubed black forest ham. Before adding the onion, I sauteed it along with the garlic. After cooking, I used an immersion blender to blend the soup until almost smooth, with a few bite-sized chunks of goodness in between. The soup was hearty and filling.

Hearty Beef Stew

I thought this recipe was delicious - thank you very much for sharing. I added some rosemary, thyme and oregano, a bit more salt and some Worcestershire sauce - and cooked it on the stove top for an hour and a half. The meat was really tender and flavorful - we loved it! I'll surely make this again.

Favorite Corn Bread

This is a really nice recipe. I made muffins instead of traditional corn bread, baking time was just under 20 minutes. I followed the recipe exactly, except for the addition of a can of sweet, whole corn kernels. Not too dry, not too moist - just perfect!

South African Malvapoeding (Marshmallow Pudding)

I made this last night and loved it - it's just as I remember it! It turned out perfectly and absolutely delicious. I definitely recommend using orange juice (instead of water or sherry). Serve it with warm custard to top off a wonderful dessert (or anytime treat :).

Lower Fat Banana Bread I

I just used this recipe (made muffins instead of a loaf) and it is wonderful! I changed a few things: used milk instead of water, butter instead of margerine, added a dash of all-spice, a teaspoon of vanilla extract, and since i'm a cinnamon lover, i added about 2 teaspoons of cinnamon. The muffins came out moist and delicious (I baked them at 325F for about 22 minutes). Thank you for a great recipe!
