Onion Rice

I used a vidalia onion and sauteed it in butter and olive oil. I added rice and garlic powder and sauteed a bit longer. I used beef broth (it was all I had thawed). The flavors were outstanding. My husband, who is not a huge fan of rice, had three servings. My small kids loved it as well. I will definitely be making this again!

Mascarpone Strawberry Cupcakes

These cupcakes were absolutely delicious! I substitued canola oil for the vegetable oil. For the glaze I used more than 1/2 a cup of strawberries and only about a cup of sugar. I usually don't make recipes from this site that have low ratings, but I am glad I made these. Just a note - if you are using a regular cupcake pan, this recipe will make 18-24 cupcakes, not 12 like it states. I filled my cupcakes up to the top and ended up with a major muffin top. These store well unglazed. I kept them covered on the counter for a few days, and felt they got better a day or two after they were baked. I just kept the glaze in the fridge and used it as needed (which I also felt got better a day or two after it was made). I will definitely make these again, and experiment with different fruit glazes for the topping. Excellent - Five stars!!

Creamy Rice Pudding

I love rice pudding! This recipe is wonderful as it stands..although I do prefer to add a little more vanilla than what is called for and omit the raisins. This time around I used quinoa and almond milk, instead of rice and regular milk. I omitted the raisins, added extra vanilla and used a heart healthy butter spread. Sweet, nutty and a bit healthier...

Kalua Pig in a Slow Cooker

I made this with Mediterranean Sea Salt (I didn't have any Hawaiian sea salt) and then slow cooked the pork roast for 10 hours. This was the best shredded pork both my husband and I have ever ate. I put sweet honey BBQ sauce on the table before dinner, which is generally a must for my husband when he eats pork. The bottle went untouched for the entire dinner. My 2 and 6 year olds loved it as well. Will definitely make it again!

Champagne Punch III

This punch was delicious! Used $5 bottles of Spumante and a $6 bottle of Riesling. I made an ice ring out of the carbonated water and left out the mint. Served at a wedding shower consisting of about 15 guests. There was none left over at the end of the shower. Thanks for the recipe, will be making this one again and again!

Zucchini Coconut Loaf

Left out the walnuts. Used canola oil instead of vegetable, sugar in the raw instead of white sugar, whole wheat pasty flour instead of the all purpose. The loaf was absolutely delicious!

Fried Okra

I used canola oil instead of vegetable oil. The outside was crispy, the inside was perfect. Will use this batter again. **Tried it with Eggplant - Yum! The only issue I had with this batter was that it seemed a little bland. I had to salt the food after it was cooked to give it a little more flavor. Next time I think I will add a little more salt and some cayenne to the cornmeal mixture.

Lemon Zucchini Bread

Taco Bean Burgers

I wasn't sure about this recipe at first, but am now convinced its a keeper. I used one pound ground beef and cooked it with about a half cup of chopped onion. I added the taco seasoning, some garlic powder and Mexican oregano after the meat was drained. Then I added a can of baked beans. After the initial taste test, I decided it needed a little more kick, so I threw in some canned diced jalapenos, probably about a fourth to a half of one of the small cans. Served on a bun with a little shredded cheddar over the top and a side of garden tomato. Good. Next time I will use beans that are a little less sweet.

Too Much Chocolate Cake

Oh MY! Wonderful melt in your mouth heavenly cake! I had to tweak the recipe a little to accomodate what I had. I used about 1/3 c. sour cream, 2/3 c. plain greek yogurt, one 3.9oz pkg choc pudding mix, 3/4 c. oil and 2 c. mini chips as recommended. I used cupcake pans (more child friendly); baked at 350 for 23 minutes. Brilliant!

Fresh Strawberry Upside Down Cake

It is possible that I am unfairly giving this recipe 4 out of 5 stars because I changed it, but I don't think the changes I made affected it that much. With that said, I made the following changes based on what I had: frozen, thawed, smashed strawberries, one 3 oz. package of strawberry Jell-o, and a funfetti cake mix instead of the yellow. The cake flipped nicely. It would probably have been a better idea to not have smashed the strawberries so much. The additional 3 oz. of gelatin would have probably kept it gelled better. The cake had an okay flavor, but next time I think I will stick with a simpler strawberry short cake.

Slow Cooker Beef Stroganoff I

Good base recipe, but as usual I had to tweak it to fit what I had in the pantry. I used 2lbs of beef cube steak, one can of beefy mushroom soup, one bag of Westpac's frozen seasoning blend (onions, celery, etc) about two cups of water and two beef bullion cubes. I cooked everything on low for about 8-9 hours while I was away at work. When I got home I drained most of the liquid into a large stock pot. I added additional water to the stock pot and set it to boil on the stove. Meanwhile I added a package of fresh sliced baby bellas and 8 oz. of cream cheese to the beef mixture in the crockpot. I boiled linguine noodles in the stock pot and then served them under the stroganoff. Delicious!

Summer Sausage

I followed this recipe exactly. I used a very good quality of beef, 100% home raised angus. The sausage turned out great! Next time I will experiment with more spices, possibly adding a little more red pepper for an additional kick. I think I will also try adding some venison for a gamier flavor. All in all...good recipe.

Seven Spiced Shark Steaks

Before trying this recipe, I will admit that I had never had shark before. I soaked the shark steaks in milk for a couple of hours beforehand to reduce the "fishy" smell (after coming across this tip online). I rinsed the steaks and patted them dry. I made the rub as directed, using dried thyme instead of the fresh. I grilled the steaks for about 15 minutes on non stick foil over medium heat. The thicker steaks failed to cook all the way through, so unfortunately they had to be nuked. They turned out pretty well. As mentioned in a previous review, we did have to "scrape" some of the spices off. Good flavor though. I will definitely try this rub on other types of meat, but I don't know that I will be doing it again with shark.

I thought these were very good. I think I will experiment with a different type of icing. Possibly one that is more of a glaze. The cream cheese icing was good, but a little too rich for my taste.

Chuck's Favorite Mac and Cheese

MMM...sooo good! Chuck is a genius! This recipe was just what I was looking for! Outstanding flavor, creamy texture..nothing like many of the other drier versions I have tried in the past. I used 24 oz. light cottage cheese, 8 oz light sour cream, about 8 oz. plain yogurt, 8 oz sharp cheddar, about 10-12 oz pasta, eyeballed the bread crumbs, sprinkled a little extra Parmesan over the top and then drizzled with olive oil instead of using butter. The whole family loved it!

Coconut Cake I

Yummy! I used lemon cake instead of white. I also used only about a cup of sugar for the filling. It sat in the fridge for three days until the party. My family loved it! The coconut filling was definitely my favorite part!

Baby Spinach Omelet

YuM! I love spinach! I didn't use the Parmesan cheese or the nutmeg because I forgot the recipe at work. I did remember everything else though. I added a little garlic powder in with the onion powder. Beforehand, in the omelet pan I sauteed a few slices of baby Portobello mushrooms in a bit of margarine. I removed them from the pan, sprayed on a little cooking spray and began cooking the egg spinach mixture. Before folding the omelet, I added the mushrooms and a little cheddar jack cheese to the center and then folded.
