Grilled Lemon Chicken

This was really good! I followed the recipe exactly but left out the red bell pepper. I marinated the chicken for 2 hours (I used thinly sliced breasts, which I think helped with the more intense flavor). We grilled on the gas grill. My family loved this- even the picky eater kept saying "Mmmmmm" as he ate!

Barbecue Beef for Sandwiches

Great recipe. I had about 4 pounds of chuck roast, and there was no way that this made 16 servings- but it was still delicious! I followed the recipe exactly, making the roast in the oven, but I added beef broth and chopped onion to the pan while roasting. Two hours wasn't quite long enough to make this tender, so I added another 45 minutes to the cooking time. I made the sauce exactly, but in the end, I used my immersion blender to make it smooth (bits of onion and garlic would not go over well with some of my family members). I cooked and shredded the beef ahead of time, and then added it to my slow cooker. I poured the sauce over all, and refrigerated overnight. The next day, I reheated on low. It was perfect. It was also the perfect amount of sauce. Doubling it would have been too much.

Herb-Stuffed Red Peppers

Great recipe! I doubled it to serve four. I used ground turkey and instant brown rice. I didn't have allspice, so I left that out. Next time, I will leave out the chicken broth. I don't think it needed it. The taste was delicious...three out of four of us said it was a keeper!!

Slow-Cooker Posole

This was incredibly good!! I followed the recipe closely- with a minor change or two. I sauteed the onion and garlic before I added it to the crock pot. I used three 10 oz cans of enchilada sauce- 2 mild and 1 medium. Instead of fresh green chilies, I used a can of diced green chilies. I opted out of the cayenne. We like spicy, but we don't like HOT. I served it with flour tortillas, shredded purple cabbage, avocado, more cilantro, and sour cream. Excellent meal, and even better the next day.

World's Best Lasagna

I've made this a couple of times. It is fantastic. I follow the recipe to a "t"- but I used dried parsley because I forgot to buy fresh. I also did three layers of four noodles...seemed to work out the best in a 9x13 pan. I didn't realize that ricotta is now in a 15 oz container instead of 16 oz- (rip off!), but next time I will either buy a larger container of ricotta, or I will add a little cottage cheese to the ricotta to stretch it. Otherwise- a great recipe! Freezes well too!

Easy Ice Cream Cake

I made this for my son's 12th birthday. I made it exactly as written, and it was delicious! I think it is a very versatile recipe, and you can really customize it to your taste. I was thinking that it would be good with Nutella between the layers instead of hot fudge. I might have to give that a try sometime!

Tortellini Bacon Broccoli Salad

This is very similar to a broccoli salad that I make. I made this one according to the directions, but I cheated and used Hormel Bacon Pieces in the jar instead of cooking bacon. Next time I make this, I think I will make my own dressing, the one that I use on my broccoli salad recipe: light mayo, white vinegar and sugar. It tastes similar to the coleslaw dressing, but it's cheaper and lower in fat and calories! A good recipe though....very tasty!!

Beef Barley Vegetable Soup

This was excellent! I made some changes because of time and ingredients. First off, I made this on the stove. I used beef broth instead of the water and bouillon. I added more carrots and celery, and some cubed potato. I did not use the frozen mixed veggies, but I did add about 1/2 a bag of frozen green beans towards the end. The taste of this soup was really good, and it was really hearty. It's a little time consuming, cutting the meat and chopping the veggies, but it was worth every second!

Panzanella Salad

I made this for a neighborhood picnic last night, and it was delicious! I followed the directions on everything except I left out the green olives (I forgot to buy them). I used a very high quality 18 year balsamic and I think it made the salad. This is a keeper!

Rosemary Ranch Chicken Kabobs

Very good! I followed the recipe, but used lime juice instead of lemon (I didn't have lemon) and dried rosemary instead of fresh. Next time, I'll buy some fresh rosemary because I'm sure it's better! The chicken was very flavorful and tender. The whole family liked it, which is saying a lot!!

Fresh Strawberry Upside Down Cake

I made this for a small group, and everyone thought it was good...the only problem I had was that the toothpick came out clean, but when I cut into it, the middle was still unbaked. Next time, I'll bake it longer (although the top was pretty brown as it was). The taste was good though. I don't know if it will go into my regular rotation of desserts, but I'm glad I tried it for something different.

Cranberry Chicken

This was really tasty! I made it as written, except I used shredded cheddar because it's what I had on-hand. I might cut down a bit on the butter next time and use two tablespoons instead of four. This recipe tasted just like Thanksgiving!! It's a keeper!

Soft Chocolate Cookies

YUM! My husband made these last night for the kids. They sounded like good "snow storm" cookies, and they were great!!! He made them pretty large, so we got nowhere near 33 cookies, but they are soft, chewy, and chocolaty! This one is a keeper!

Magic Peanut Butter Middles

I made these for my son to take to a Super Bowl party. We had to sample them before he took them...they were fantastic and almost didn't make it out of the house! I found them to be pretty labor intensive, but worth every second of the work! I followed the recipe exactly. Next time, maybe I'll add some mini chocolate chips to the filling for an interesting look/texture.

I just whipped this up for lunch, and it is very good! I have a couple of other favorite potato soup recipes, but I didn't have the ingredients I need on hand. I always have the ingredients for this one! I made it exactly as written, but I used skim milk.

Kielbasa and Potato Bake

Very good. I thinly sliced 4 baking potatoes, and layered them with the sliced kielbasa. I used 1 can of cream of mushroom soup, mixed with one can of skim milk, a little bit of jarred minced garlic, and freshly ground black pepper. I poured the soup mixture over the potatoes and kielbasa and topped with 1/2 a bag of shredded sharp cheddar cheese. I baked for an hour, and then topped with some French's Fried Onions and baked about 8 minutes more. Let it set outside the oven for a while for the sauce to thicken. A word of advice: this does not need the teaspoon of salt!! The kielbasa makes it salty enough (this coming from someone who likes salty!). This was a good diversion from our usual grilled kielbasa and my family says it is a keeper!

Jordan Marsh Style Blueberry Muffins

My mom has had this same recipe for at least 35 years. I made these today and they are fantastic! I used butter instead of shortening, and 2 cups of frozen, but freshly picked, blueberries. Jordan Marsh, for those who are wondering, was a popular department store in New England. They had a bakery, and a restaurant, and were famous for their muffins!

Chicken Chipulos

I'm giving this 4 stars because my husband and 14 year old son loved it. I thought it was just OK, and my 10 year old son hated it (but he's a very picky eater!). I followed the recipe as written, with the exception of using taco cheese instead of plain cheddar. It was a good way to use up leftover roasted chicken, but I'm not sure if I'll make it again.
