Hot Pepper Cheese Ball

I've made this recipe quite a few times, and I've started adding about 3/4 of a can of chopped green chilis to the recipe. It adds a little bit of color and texture, and a little more 'kick' to the cheeseball!

Baked Cheddar Bacon Spread

Made this for Christmas Eve. Served it with French Bread, crackers, and tortilla chips. The French Bread was the best. Even better reheated the next day. Just be sure to stir before serving to better mix the flavors.

Coconut Cream Meringue Pie

This pie tasted fantastic! It was exactly the taste I was looking for. I had two minor issues with the recipe. First, I like a lot of meringue so next time I will double the meringue portion. Second, the pie 'weeped' or formed a liquid layer between the meringue and the cream layer. After I cut the first piece, all the weeping ran into the pie pan. My aunt, who bakes all the time, said to use half sugar, half Splenda and that should fix the weeping, so next time I will try that. But once I cleaned up the liquid, the pie was still fantastic.

Flavorful Flounder

This was delicious. I added some garlic powder and onion powder and omitted the green onions. Baked at 400 for 10 mins and then added the topping and broiled for 5.

Unbelievably Easy and Delicious Vegetarian Chili

Slow Cooker Lasagna

After reading reviews, and realizing I was short on some ingredients I slightly modified this recipe. I used a mix of spaghetti sauce, tomato sauce, and tomato juice to reach 29 oz after I realized I was short of tomato sauce. I also added an egg to the cheese mixture and used a little bit more cottage cheese (to just finish up the container). Used farfalle pasta in place of lasagna noodles b/c I didn't feel like fitting rectangle pasta in a round bowl. I have to admit I was skeptical and thought we might be eating crunchy or mushy noodles. But everything was cooked perfectly! Delicious!!

Best Bread Machine Bread

I scaled this down to a 1 lb loaf and I should have made the full 1 1/2 lb because my husband and son inhaled it. I did the proofing of the yeast, which I had never done before but followed other reviewer's suggestions and went ahead and gave it a try. My husband said it was one of the best loaves I've made...nice crust and soft on the inside.

Beer Batter Fish Made Great

We've been eating a lot of tilapia lately, and I've been using a cornmeal based breading. We were looking for somthing a little different so I tried this one. We loved it. I was worried about the amount of spices, the paprika seemed to be a lot, but it was great. I half the recipe so I only need half a bottle of beer, so hubby seems happy with an excuse to finish the rest of the bottle for me. How helpful he is. :)

Cherry Cobbler I

This was my first attempt at cobblers...and it was a success! It tasted just like the cobblers my grandma and aunt used to make! Easy, quick, I had all the ingredients at hand, and delicious!

Chicken Tortilla Soup V

I skipped the step to saute the chicken, instead I put everything in the crock pot with a raw chicken breast and cooked on low about 6 hrs. Took the chicken out and shredded it and then put it back in the soup. Easy and delicious!

Ranch Dressing and Dip Mix

I'm occasionally finding a recipe that calls for dry ranch mix and I never have any on hand, like for the Vegetarian Chili recipe I made tonight. Found this recipe and it was perfect. Made up a batch and will keep in my pantry for next time I make the chili.

Chocolate Toffee Crunchies

Bread Machine Rolls

These are my husband's new favorite roll. I make them for him at least once a week. These are so easy to make - I dump everything in the bread machine right before I go pick the kids up at the bus stop! I use All Purpose flour b/c that is what I keep on hand. I also dont use the milk powder - I just substitute the warm water with 1/2 milk and 1/2 water. I also skip the egg white/water wash at the end and they still brown nicely.

Teriyaki Sauce

I use this recipe every time a recipe calls for Teriyaki Sauce. Way more convenient than having to keep a bottle on hand for the odd chance that I need it. I replace the cooking sherry with water.

Scalloped Tomatoes

I have to admit, I was skeptical about this recipe. Brown sugar...really? But it had so many good reviews, and we had so many tomatoes, we decided to give it a shot. I used toasted wheat bread and added Parmesan. It was delicious!!!

Waikiki Cornbread

My 9 year old has recently discovered that he loves cornbread. He's been eating the box mix, but I didn't have any on hand so I made this recipe instead. He loved it and said to make this instead of the box mix from now on. I think next time I will double the cornmeal though, for me it didn't have enough cornbread taste and texture. As for the buttermilk baking mix, I just used plain Bisquick and it turned out fine.

Coconut Poke Cake

Delicious. Followed the instructions as written with one exception - I don't like Cool Whip frosting, so I took another reviewer's suggestion and mixed 1/2 can of whipped white frosting with the cool whip. That gave it the right amount of sweetness for me. I used a fork to poke the holes and waited an hour and all the liquid was absorbed. Used Wilton Cake Release on the pans before baking and the cake popped right out after the hour.

Spicy Crispy Beef

I had to make a lot of modifications to this recipe b/c I don't keep a many of the ingredients on hand. It was still excellent! I used flour instead of cornstarch, white vinegar instead of rice vinegar, water instead of the rice whine and chili powder in place of the chile paste. Also I omitted the ginger b/c I don't like ginger. This really tasted just like something you'd get at a restaurant. Delicious!

Catherine's Spicy Chicken Soup

This is restaurant quality soup. After boiling the chicken I put everything (except sour cream) in the crockpot and cooked for 5 hrs. Excellent! I halved the recipe but it still makes a lot so I will be freezing individual portions.
