My Crab Cakes

Lemon Ginger Shrimp

Instead of grilling this, after marinating I threw it all in a skillet and sauteed until the shrimp was cooked. This was pretty tasty, I omitted the ginger b/c I don't like ginger. I'm not sure if I'm crazy about the taste of the sesame oil, next time I'll omit that and see if I like it better.

White Chili I

I am on the Abs Diet for Women and this recipe has three powerfoods - olive oil, beans, and lean meats. This was fantastic too! Quick to make and delicious! I left off the cheese to cut calories and fat but it was still great!

Coconut Cream Meringue Pie

This pie tasted fantastic! It was exactly the taste I was looking for. I had two minor issues with the recipe. First, I like a lot of meringue so next time I will double the meringue portion. Second, the pie 'weeped' or formed a liquid layer between the meringue and the cream layer. After I cut the first piece, all the weeping ran into the pie pan. My aunt, who bakes all the time, said to use half sugar, half Splenda and that should fix the weeping, so next time I will try that. But once I cleaned up the liquid, the pie was still fantastic.

Cherry Crisp

Excellent and easy to make! Really good when warm. I omitted the nutmeg b/c I don't like it but it was still fantastic. I have been crazy cherry pie and this was better than the pie slices I have been getting at a local restaurant.

Elaine's Sweet and Tangy Loose Beef BBQ

Really good, both my 6 year old son and my husband loved it. The only problem I had was the roast wasn't ready to be shredded after 4 hrs, next time I'll wait 6. Instead I just cut it into large chunks, added the sauce, and cooked 4 more hours then shredded. Still excellent though!

Beer Cheese Soup II

Pretty good soup! I used flour instead of the cornstarch and mixed it up with the cheese before adding. I used shredded cheese and mine was not grainy. It was a little thin, so I think next time I might add another cup of cheese, but other than that it was great!!

Gooey Butter Cookies

Gooey Butter Cake has been one of my favorite recipes for years. These cookies are just as good...if not better...since they don't have the gooey topping that can get too rich after awhile. Guess that gives me an excuse to eat more cookies!

Slow-Cooked Chili

I used the RoTel tomatoes as suggested in previous reviews. It really did make it spicy! Next time I'll probably use one can of RoTel and one regular can of tomatoes. But the chili itself was excellent and very easy to make. I'm the only one who eats chili in the house so I ate this for a few days and it was better the second day.

Triple-Cheese Macaroni

This wasn't soupy at all. In fact, if you leave out the egg you could eat this w/o baking it...it's very similar to how my aunt makes homemade mac-n-cheese. My 1 year old devoured this. My 5 year old wasn't too thrilled about the visible pepper (next time I'll use white pepper I guess), but once he tried it he liked it too. It was even better the next day reheated in the microwave.

Baked Cheddar Bacon Spread

Made this for Christmas Eve. Served it with French Bread, crackers, and tortilla chips. The French Bread was the best. Even better reheated the next day. Just be sure to stir before serving to better mix the flavors.

Hot Artichoke and Spinach Dip II

We have an annual tradition of eating an appetizer dinner on Christmas Eve and New Years Eve. Last Christmas Eve I made another artichoke dip, didn't like it, so I tried this one on New Years Eve. My husband doesn't eat artichokes. Which was good, cause I wasn't sharing this dip with him...it was too good!!! I think I finishd it myself by the end of New Years Day! I've been looking fwd to this all year, already planning to make it Christmas Eve this year and can hardly wait!!!

Chocolate Toffee Crunchies

Chocolate Chip Cheese Ball

Just like cookie dough! I served mine with vanilla wafers and it was great. I also froze it until ready to serve, and it held up considerably well even outside in 80 degree temperature.
