Easy Tortellini Soup

Excellent! It was declared "one of the best soups ever" by my partner. I modified a bit and used vege broth instead of chicken broth (we don't eat meat) and added some fresh basil at the end! A total keeper! The second time I made this I omitted the tortellini and added shrimp (we do eat seafood)-- also a total hit! Thanks, Katie!!

Chocolate Chip Pumpkin Cookies

Just finished making these and a majority of the cookies mysteriously "vanished" from the plate...sign of a good cookie recipe! My only suggestion would be what everyone else has said: add MORE spice to the mix (pumpkin pie spice would work nicely as would some clove). I'm off to secure a few cookies for myself...

Southern California Cioppino

Most excellent! I must admit the first time I made this I nixed the "southwest flavors" (cilantro, chile powder, etc.) as I was after a more classic cioppino -- turned out great! I was truly impressed! Second time I completely followed the recipe -- and it was brilliant! If the fish weren't so bloody expensive I'd make it more often...*grumbles*...

Jamie's Cranberry Spinach Salad

Uh muh gawd! I made this salad for an ill-fated Christmas dinner (My FIRST Christmas dinner..and, yeah, I tried to get too fancy-shmancy using recipes unfamiliar to me [the main course was cooked in a PUMPKIN! Need I say more?]) And this lovely salad was the saving grace! Everyone raved about it...as a matter of fact, it was the ONLY thing they raved about...Thank you, Jaime, for saving my butt!

Mexican Baked Fish

Quite easy and very tasty! Two key factors: get GOOD QUALITY salsa and corn chips and be sure not to overcook the fish. Garnish with some cilantro and diced green onion and dig in! Yummy!

Spicy Potato Soup I

Absolutely delicious (and simple too!) I used 2 cups of vege broth (instead of all water), added a bit of cilantro and yellow squash, but otherwise kept to the recipe. Served it up with some grated cheddar, a wedge of lime and warm tortillas. Big, big hit! (Note: if you want to spice it up a bit more, add another serrano)
