Potato Tacos

My mother in law makes these! They sounded so blah to me, but they are so good. We don't use ranch, but instead top them with cabbage, tomato, cheese, cucumber, whatever fresh veggies you have. Love them!

Cilantro-Lime Rice

This rice is really good. I didn't read the recipe through once i got home, so i forgot the bouillon, but it was still good. It was definitely missing something without the bouillon, but the cilantro and lime gave the rice a really fresh taste.

Quick and Easy Green Chile Chicken Enchilada Casserole

This was just ok, not great. I didn't have any problems with it being too runny or anything, it just wasn't great. Also, it takes like two hours to make with baking the chicken and then baking the casserole, so it's not exactly 'quick.' I wanted to love it!

Corned Beef and Cabbage II

I made this corned beef for St Patty's Day and it was really good! My husband loved it. The only problem i had was cooking time - my roast was only 3.5 lbs, so i wasn't sure how long to cook. I erred on the side of too long and it was a bit dry, but that was my fault not the recipe. Also, the cabbage with apples was really good!

Penne with Chicken and Asparagus

This was just ok. I made it for dinner last night and was disappointed. I thought there was way too much pasta for only 2 chicken breasts and 1/2 c chicken broth. Though my husband liked it, i think it would be better with about half the pasta.

Pecan Pie Tarts

Gave these a poor review a while back. Tried them again and loved them! I screwed up last time by not spreading the dough up the sides of the cups. The filling pretty much glued everything to the tin. This time I made these in mini muffin tins and while that was ok, I think they will be better in regular size muffin tins. Also, I had alot of filling left, but I think that's because of the mini size. Great recipe!!

Hot Buttered Rum Batter

I made this batter last weekend for an outdoor party and it was awesome! Only suggestion is - note this recipe is for 100 servings. It makes alot!
