Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Here is what I did: I did not use oil and used vanilla yogurt instead. Added 1/2 cup oats as suggested by other reviewers. When these came out of the oven they were great, except the batter did not cook evenly; the area around the frozen strawberries did not set. A few hours later the frozen strawberries were plain slimey. My 4 year old was even grossed out. I will try these again with the addition of oats and subbing yogurt for oil, but will not use the strawberries. I think that nuts, dried fruit and fresh berries would work really well, or dehydrated strawberries.

Baked Ziti II

Not bad, but bland. If I make this again I will add some canned tomatoes and chopped olives. This isn't a recipe I would go out of my way to make.

Healing Cabbage Soup

Not the best soup ever, but good enough to make again. I added juice from the canned tomatoes and white beans for an Italian flavor. Used broth instead of water. Very healthy, cheap and easy.

Lemon Blueberry Drop Scones

GREAT recipe. This is one I would serve for guests. No, these are not as dense as a traditional scone, but they are light, soft & full of flavor. I had vanilla yogurt so that is what I used, and I found that the juice and zest alone provided great lemon flavor. I love how these have a little less fat content but still so tasty. Oh, and fresh blueberry sends this recipe over the top.

Brooke's Best Bombshell Brownies

Amazing! Omitted the chocolate chips because we were out. Cut the recipe in half and baked in 9" pie pan for 23 minutes, or until the outside was done but the middle was still gooey. Refrigerated the brownies due to the goey middle which turned into a sort of fudge when chilled. Amazing!! i will make these true to recipe next time, but I'm already pretty sure these are my favorite brownies. I have a feeling finding this recipe was not good for my waist line. I wan to make these brownies again already!!

Rich and Creamy Roasted Eggplant Soup

Very good and full of flavor! Be sure to use good in season tomatos or sub with canned ones. Also watch the garlic while roasting. It will brown faster than everything else. I learned this after it was already black. I skipped the cream as I thought the soup tasted great without the exta fat and added cayenne pepper and a squeeze of lemon. This was so yummy! The goat cheese sent it over the top! A very decedant soup!

Best Peanut Butter Cookies Ever

I never thought I'd say this about anything, but there is way to much sugar in this recipe. The cookies were so sweet that I could have cut the sugar in half and probably added more peanut butter. A natural peanut butter would be best with all of this sugar. Needless to say, this was not the yummy peaunut butter cookie recipe that I was looking for.

Mama Corleone's Sausage and Peppers

yum! I made this with wheat speghetti and italian chicken sausages. I slices the sausages into rounds for better presentation and easier eating. I love sauce, so I did use a tomato caper and olive sauce on the pasta. This was really tasty and healthy with the alterations. I did agree that the order of preparation directions was a bit off, i added the precooked sauge to the peppers when they were almost tender and did the pasta somewhere in between.

Pancho Villa Baked Tilapia

Tasty and healthy too! I used fresh salsa instead of the tomatoes and chillies mix and also sprinkled the fish with cumin for a little kick. I served it with tortilla chips and gaucamole. Yum! Next time I will put the tilapia in tortillas for fish tacos!

Sensational Strawberry Shortcake

This tasted fine, but not great. It's super crumbly and very hard to cut, so it's not the best cake for company. If I did make this again I would try to make individual cakes in muffin tins to prevent the cake from falling apart.

Mushroom and Swiss Chicken

This tasted good, but not great or exiting. It was just another one of those easy chicken recipes with decent flavor. I added balsamic and lots of salt pepper and cajun seasoning. The chicken did come out very tender though. Next time, I will take another reviewers advice and make these into sandwiches.

Cajun Seafood Pasta

Very good and spicy as promised. I made an express version of this with precooked frozen shrimp and dried basil, thyme and parsley from the spice rack. I also added fresh garlic. It was so easy to whip up and very yummy too! I will make this again.

Supreme Scalloped Potatoes

I didn't think that this recipe could go wrong with all the rich ingredients, the fat content:) and the reviews, but my family thought that it was only O.K. I kept adding things to it as I was eating to give it more flavor. All I could taste was the canned cream of chicken soup. I will not make this recipe again.

Unstuffed Cabbage

I really did not care for this. I love cabbage and tomatoes, and thought that this recipe would be a winner but I found it to be quite bland. However my two year old liked it, so maybe it's a good way to introduce cabbage to picky youngsters. It tastes a bit like speghetti o's.

Lamb and Winter Vegetable Stew

This is very good. I use beef as it is easier to find but otherwise make it true to the recipe. This is much tastier than traditional beef stew with more nutrients too. I find myself craving this stew reguarly, and even my husband who does not like squash and sweet potatoes loves this.

African Curry

Really good! Both me and my boyfriend love it! I used boneless thighs, more than double the curry and garlic and salt. I also added golden raisins which really added to the dish. Forgot the lemon juice but will add it next time. This is a great recipe, can't wait to make again!
