Curried Butternut Squash and Pear Soup

AMAZING! I used light coconut milk, ground ginger, nutmeg, and cinnamon, onions, frozen butternut squash, 3 small pears, curry, garlic powder. I roasted the pears (not peeled), squash, and onion together while I put the other ingredients on high in the crock pot. 45 minutes after roasting I added to the crock pot and cooked on high 1-2 hours. Then I used the immersion blender and was done. I topped with Trader Joe's pumpkin croutons...heaven!!! The only reason I changed the recipe was to use what I had on hand and to be quick while taking care of my little one.

Grilled Eggplant, Tomato and Goat Cheese

Excellent! I sliced the eggplant, brushed with olive oil and balsamic vinegar, layered tomato and basil, seasoned with salt, pepper, and a small amount italian seasoning and either goat cheese or smoked mozzarella on top and then baked at 450 for 10-15 minutes on cookie sheet.

Pumpkin Apple Cobbler

Bottom: 1 jar pumpkin butter, light cream cheese, 1 egg, and 8 oz dried apples (soaked overnight). Topping: Trader Joe's pumpkin bread mix and 1/2 cup butter. Bake as above...delicious and quick!

Pumpkin Pineapple Chili

This is really good. Excellent combination of flavors. I actually came across this by accident when I planned on grilling but there was bad weather and had to come up with another way to use all the onions, mushrooms, bell peppers, and pineapple. I can't believe I happened to have all the ingredients on hand. If you like chili and/or pumpkin even a little bit you have to try this recipe!

Chef John's Macaroni and Cheese

Very good but not quite the classic mac and cheese that I was expecting. I didn't the thyme was too strong. Overall excellent flavor, not sure what I would change to get the classic dish I was looking for.

Slow Cooker Chicken Mole

This was awesome! I used pork instead of chicken. I shredded the pork about 3/4 of the way through cooking. A little spicy for me but maybe that's because I added the rest of the adobo sauce from the one (and only) pepper. I served it with tortillas and basically made burritos.

next time chop the onion smaller or cook them first. also nutmeg sounds good. used cream of mushroom instead and was great. husband also liked the recipe after claiming he never ate creamed spinach.

Maple-Apple Baked Beans

This was very dry. I kept it covered the whole time and added extra liquid as instructed. I used about 1/4 of the topping for the apples and it was enough. I would've given the recipe 5 stars based on flavor alone.

Daddy's Whisker Soup

I love dill so I had to try this soup. However, I figured out too late I only had half the amount of velveeta needed and not quite enough milk. I replaced half of velveeta with cream cheese and used some half and half. I was feeling guilty over all the fat I addded in it so I added a cup of chopped celery. This soup is amazing!

Seafood Chowder

Amazing! I was cleaning out the fridge and freezer and so this is what I used - light cream, garlic, cream of mushroom soup, onions, carrots, potatoes, canned corn, 16 oz fresh mushrooms, 1 pound scallops, 1 pound salmon, 2 cans clams, salmon flavored cream cheese, 1 chopped red bell pepper, pepper, salt, parsley, and my favorite- dill. I didn't alter the recipe on purpose but had to use what was on hand. It was absolutely delicious. Thanks for such a great recipe!

good soup, I had to change the recipe based on ingredients that I had. only problem I had was the bread was kind of soggy even though I added it, baked it, and then served it immediately.
