Too Much Chocolate Cake

Awesome! This is my go to cake for all birthdays now. I used the mini chocolate chips and use coffee instead of water. It is great with either Butter Cream Frosting I or Satiny Chocolate Galze.

These were just ok. Very easy because you start with a pre-made mix. They were not what I was hoping for, probably would not make again.

Satiny Chocolate Glaze

This "glaze" is great over the Too Much Cholocate Cake. I say "glaze" because it was pretty thick, more like a frosting-which I why I gave it 4 starts. Not sure how it would run down the sides of anything! But it was very good and I got lots of compliments!!

Sweet Corn Cake

Yummy! I took the advice of others and used flour plus corn meal instead of the masa. It takes longer to bake than the instructions. I threw in a can of cream of corn and didn't bother putting the whole corn kernals in the food processor. I like the texture better. And of course I added a little more sugar so it was nice and sweet!

Cranberry Sauce

So good and so easy! I took the suggestions and did half white sugar and half brown sugar. I also added the juice and zest of one orange. The only down side to this recipe is that it is a little loose, not really "set" like canned cranberry sauce.

Toll House Crumbcake II

All I can say is oh my god! This is so good. I always get requests for this recipe when I make it. For the topping double everything except the chocolate chips. Enjoy!

Pork Chops to Live For

I didn't use pork chops for this recipe, instead I used a pork shoulder because it was on sale. Plus I am not sure how pork chops would work out in a crock pot, they might get to dry. I also added an envelope of onion soup mix for extra flavor. I then thickened the gravy with some corn startch. Really good with rice!

Jimmy's Mexican Pizza

This was good but not great. I feel like it was missing something but can't put my finger on it. I would pre-crisp the tortillas for sure. I pre-crisped mine but should have let them go a little longer because the bottom still came out a little soggy. Over all not too bad!

Beth's Spicy Oatmeal Raisin Cookies

Not anything great, tasted like oatmeal cookies. Mine came out really thin and the cookies fell apart after I put them in a container. I used regular shortening and added about 1/8 teaspoon of ground ginger. Maybe next time I will use all shortening so the cookies hold their shape better. Also I soaked the raisins in hot water for about 10 minutes.

Slow Cooker Chicken Cacciatore

This is a great slow cooker recipe, not to mention most of the ingredients I always have on hand. I like to use bone in chicken instead of boneless chicken but that is just me. I also like to throw in any extra veggies I have. Great with hot noodles!

Baked Honey Mustard Chicken

This was very good and very easy!I had to cut off my 3 year old because he was going to eat the chicken I was saving for DH. Made it twice in one week, great with rice! As suggested, I only used half of the paparika as suggested by others. It worked just as good on bone-in chicken thighs. One suggestion though-after the chicken is cooked through, stick it under the broiler for about 5 minutes or so. It crisps up the chicken and makes it delicious!

Cinnamon and Lime Chicken Fajitas

I thought this was a nice change from a regular fajita. I really like the potatoes and I did use less cinnamon, that way it wasn't overpowering. DH didn't really care for them but I did!
