Minnesota Wild Rice Soup

I really liked this recipe a lot. I used milk instead of cream, added potatoes and halved the flour. I also added the flour with the broth, premixed with water to avoid chunkiness. It worked out really well. Perfect thickness and not fattening.

Coconut Tofu Keema

I like this recipe as a starting point, however I do change a few things. First of all I too reduce the amount of tomato sauce by half. Also I change the order in which I add things. I fry the tofu, then add mustard seeds, cumin, coriander, tumeric and curry powder. I heat these spices until toasted together with the tofu and then add the vegetables. I stir fry those until tender and then add the coconut milk and the tomato sauce. I find that toasting the spices adds a lot more flavor.

Thai Curry Tofu

Like the other reviewers I made many changes to the existing recipe, hence the 3 stars. With my changes I thought it was quite fantastic however. I fried the tofu, poured off any excess vegetable oil and then added 4 chopped cloves of garlic, half an onion, mushrooms, broccoli, red pepper flakes and 2 tablespoons chopped ginger. After sauteing that until it was about half cooked I added 2 tablespoons of lemon pepper and the curry as well as salt and and 1 tsp of basil. I mixed that all together until the spices were fragrant (1-2 minutes) and then added the coconut milk and cooked for a few more minutes until the broccoli was tender. The cilantro I added just before removing the dish from the heat. The lemon pepper I think did the trick, as it was excellent.

Tofu Keema

As is the recipe was a little bit bland while at the same time being way too spicy. Next time I will increase the amount of curry and cumin seed, decrease the amount of jalapeno and add the vegetable broth thickened with flour that others recommended to make more of a sauce. I might also add a small can of tomato sauce to get more of the tomato flavor to the curry as the one tomato included in the recipe did not really add much flavor to the dish.

Simple Cauliflower Soup

Very tasty. I used Idaho baking potatoes and doubled the quantity (2 instead of 1). This required that I add another cup of broth. I also pureed it and I think that was how the recipe was meant to be served. Very good and easy.

I enjoyed this dish, having left out the sun-dried tomatoes as I don't care for them. In the future I would include fresh tomatoes and substitute kalamata olives for black olives, which didn't really mesh with the dish.

West African Peanut Soup

This recipe was just not good. It was way too salty and there wasn't much flavor. To rescue it I turned it into pad thai. There are probably better recipes for this type of soup.

Vegetarian Tortilla Stew

Excellent stew that is extremely easy to make. I did make a few changes that I think really improve this recipe. I fry onions, garlic, and green/red pepper in oil until cooked, and then add the enchilada sauce and broth. I really dislike fake chicken, so I add sliced veggie brats instead. My family of non-vegetarians really enjoyed it.

Pasta with Gorgonzola and Sweet Onion

I made it a couple times and each time I found that the Gorgonzola was pretty overpowering, especially combined with the balsamic vinaigrette. Next time I will cut the amount of gorgonzola in half, use parmesean for the rest of it and leaf out the balsamic vinaigrette. Also, I made it over pasta once and gnocchi the last time. I will use gnocchi in the future.

Pasta with Scallops, Zucchini, and Tomatoes

Very good recipe. I only used 2 tbs olive oil. Things did start sticking as I added mushrooms to the recipe as well but that was no longer a problem after I added the tomatoes. After adding the scallops I added a 1/4 white wine. Would really recommend adding the wine.

Bean Soup With Kale

Great recipe. It would probably be very tasty as is but I did change a few things. First of all I added a hot pepper, 2 carrots and 2 yukon gold potatoes to the onion, kale and garlic and fried those together for about 10 minutes. I mixed the tomatoes and let that cook a while before I added the broth. This mixture I simmered for about 15 minutes before adding the blended mixture. It was spicy and delicious. Next time I will probably add another can of beans to the blender mixture to give it a thicker consistency.

Greek Pasta Salad with Roasted Vegetables and Feta

I have made this twice for parties and it was devoured both times. One thing, always serve it warm. Everyone mentioned how they liked that it was not cold. Also I added about twice as much spinach and olives, delicious!

Spinach Enchiladas

I thought the filling was a little bland and too creamy. To get more substance I later halved the current contents and added refried black beans and boca ground "beef" (since I am a vegetarian). To spice it up I added cumin and chili powder like some of the other reviewers suggested. I also found that some brands of enchilada sauce are kind of gross so now I will always go with Old El Paso brand. To top it off I used cheddar cheese. My boyfriend gave it 5 stars with my changes.
