Yum Yum Sauce

I've never had this sauce at a Japanese steak house, so I had nothing to compare it to. For me, yum yum was just so so.

Kerri's Holiday Punch

I'm not much of a drinker, so a little went a long way for me. Served this at a holiday party and everyone enjoyed it. I did mistakenly use gingerale instead of lemon-lime soda, but folloed the recipe otherwise.

Cloverleaf Rolls

Very good rolls. The bottoms were a little darker than I would have liked, so I may reduce the oven temp a bit next time.

Mom's Yeast Rolls

These rolls were tender and tasty. I used bread flour and brushed with melted butter after baking, but otherwise followed the recipe as written. Mine were not as pretty as the ones pictured, but they were very good. I will make these often.

Zesty Slow Cooker Chicken Barbecue

Something went wrong for me with this one. The sauce tasted great at first, but I don't think the slow cooker helped it at all. My chicken came out stringy. If I had saved some uncooked sauce to mix in I think I could have salvaged it.

Baked Spaghetti

Rating is based on my spaghetti-loving kid's opinion, and served it at his surprise 16th birthday party. I may make again, but with additional seasoning and more sauce. I served this to a group of 16 to 19 year old boys and it was just no competition for the buttermilk- soaked, panko-crusted chicken nuggets.

Marinade for Chicken

I wish I had time to marinate overnight for more pronounced flavor, but this was tasty after 4 hours. I have just grilled the first boneless skinless breast which I pounded and pierced before marinating. I'm attempting a sauce with the leftover marinade, which I suspect I wouldn't need if the chicken had soaked up flavor all night. *Update* I had time to marinate overnight, and my chicken was moist and flavorful. Delicious with potato salad, corn on the cob and a garden salad. I really like this recipe as is, but if you add a little garlic, it exceeds five stars.

Sweet Onion Pie

As others have noted, this is an easily adaptable, easy to make recipe, and that's what my rating is based upon. I added a chopped leek and 2 minced shallots because there are few things in life they can't improve, and I used Swiss instead of cheddar. This onion lover will make these changes next time: I will use unsalted butter in the crust and prebake it. The crust was unpleasantly moist and spongey to me., but a bread pudding fan might like it as is. I'd like to try this as an appetizer in a mini muffin tin, and maybe mix a little cracker crumbs with the cheese for a little extra crunch.

Japanese Style Deep Fried Shrimp

I used jumbo butterflied shrimp and did add a little onion powder, because lately I seem to add it to everything, but otherwise followed the recipe. Very crispy, mildly seasoned shrimp that were delicious with homemade cocktail sauce. I'd like to use similar breading for coconut shrimp with a sweet pineapple sauce.

Shortbread Cookies II

Very simple to make, tasty cookie. I had a little trouble with my cookie press, so I chilled, rolled and cut into small hearts. I used some for sandwich cookies - some with raspberry jam, some with some "failed" fudge. Dusted with some powdered sugar, they were pretty as well. These will go in my Christmas cookie collection.

Lemon Sugar Cookies 1

Just took these lemony pillows out of the oven - I drizzled a powdered sugar/lemon juice glaze over them and topped them with a teensy bit of zest. Very nice soft cookie.

Simple Garlic and Basil Pesto

Mushroom Stuffed Chicken Rollups

Very good. Made the small addition of minced red onion (I would have used shallots, if I had some) and sliced mushrooms in the pan. I used a mini chopper to mince the onions and mushrooms for the stuffing. I will make this again, for company.

Tomato Zucchini Casserole

Just took this out of the oven. I used reviewer suggestions and used mozzarella instead of cheddar, and I was a little too lazy to mince fresh garlic, and used garlic powder. Very tasty, nice consistency. Next time will try with fresh herbs and garlic. Thanks for the keeper!

Empanadas

I found this dough difficult to work with. I used cherry preserves, and had much of it melt out of the pastry, even though I was careful (or so I thought) to seal them well. End product was tender and flaky. I think I would have preferred a savory filling, or a dough with a touch of sweetness with the preserves. I think this is one I will continue tweaking until I'm happy with it. I've had empanadas, both sweet and savory, but only a few times from restaurants. I thought those were fried.

Herb Roasted Pork Loin and Potatoes

I made this for dinner tonight, and I wasn"t happy with how it turned out. Unfortunately, it was not the moist, succulent pork dish I hoped it would be. The flavor wasn't bad, but the pork was dry. Fortunately, there were enough drippings to make a pan gravy, so it was edible.

Honey Baked Chicken I

I made this for dinner last night, and found the flavor lacking intensity. I added more of the dry seasonings than the recipe called for, but somehow, the garlic powder and pepper didn't come through. I did use the pan drippings to substitute the water in some Stove-Top stuffing, on a whim, and that was pretty tasty. The chicken was better cold, sliced for a sandwich, as I did today.
