About this Cook
Mother of two teenaged boys with big, but very different appetites. I'll often cook two completely different meals for dinner to accomodate them. My challenge is to find recipes we all enjoy.
My favorite things to cook
I am really enjoying just trying new recipes and new gadgets. I love using Great Big Beautiful Bertha, my Kitchenaid mixer to make cakes and cookies.
My favorite family cooking traditions
My mother always made sweet potato pie for Christmas Dinner. She'd bake it the day before, so every Christmas morning my breakfast would be a slice of her homemade heaven, for which she never used a recipe. It was my father's appointed task to put the cooked sweet potatoes through the hand ricer, which required considerable strength.
My cooking triumphs
Preparing and delivering a big, hot, homemade breakfast to a very large family on the morning of a very early funeral service - on time and delicious. Also, I feel like it is a daily triumph to work more than 40 hours a week and still prepare just about everything from scratch.
My cooking tragedies
I once had an airbake cupcake tin malfunction in the oven. One of the cupcake sections literally shot out of the pan during baking, and spewed batter all over the oven.

Cranberry Sauce Extraordinaire
I used a mix of cherries, cranberries, blueberries and golden raisins for the dried fruit, which was great. The blueberries added a nice bit of color. This was delicious, and even better the next day. I thought there was a bit too much cinnamon when I tried it before it had completely cooled, but by the next morning was perfectly spiced. I had it for breakfast! Update: Very adaptable to what you've got on hand. For my second batch, I was out of pears, so I used fresh pineapple and rather than peeling and processing an orange, I used mandarin oranges. Turned out great! I topped a bagel with cream cheese and this cranberry sauce, which made an incredibly good breakfast!

Cream Cheese Squares
I was skeptical about these simple ingredients, particularly the store-bought crescent roll dough - I am admittedly a snob about such things - but this was terrific! The flaky pastry, rich, creamy filling, and crunchy sugary topping were a perfect combination. I was so skeptical, in fact that I halved the recipe; a decision I regretted with the first bite!

Easy Corn Salsa
This recipe has just become part of a very tasty "accidental" meal. The story: It all started with some homemade coleslaw that I wanted to use up, so I planned to make pulled pork sandwiches. I put a boneless pork loin in the crock pot, sprinkled it with garlic powder, onion powder, salt and pepper,doused it with a cup of red wine vinegar and cooked it for 6 hours on high. I made some homemade bbq sauce, but the pork was sooooooo good without it, I decided to go a different route. I tossed a little of the crock pot juices in with the pork which I had shredded. I served it on top of some super easy cilantro-lime rice. It was really good, but it needed something. This salsa was the something it needed. It was very easy to throw together with on-hand ingredients. I happened to have some fresh lemons and strawberries so I made lemonade with mottled strawberries, which complemented this meal perfectly. When summer corn appears, I will try this recipe with some fresh corn, but it is surprisingly good with the canned stuff. The only thing better about going to Chipotle is they don't make me clean the kitchen!
