About this Cook
I love to cook and I love food!!
My favorite things to cook
Oh My Gosh ~ just way too much to mention here. What can I say? We love food, GOOD FOOD. I will take the time to find the right ingredients for a recipe. I am not one to substitute ingredients, unless it is absolutely necessary. "IF" I had to mention one or two FAVORITES - I would say Homemade Pizza, right down to the sauce and crust. And the other would be cooking with beer or wine and adding to sauces for pasta or soups & stews or just about anything.
My favorite family cooking traditions
Growing up in a Sicilian household, I find that holding on to those family traditions are as important as making new family traditions. Sicilian foods are not as well known as your typical Italian foods. I love to seek recipes from that region of the country.
My cooking triumphs
Pizza ~ Homemade of course
My cooking tragedies
Biscuits ~ Nuff Said

Chicken Enchiladas I
Debbie, thank you for sharing this recipe. I've made many different recipes before but this one was a bit different. It was a huge hit for dinner this New Years Eve!!!!

Colleen's Slow Cooker Jambalaya
I was beginning to give up all hope on this recipe because it was so soupy after cooking for 8 hours, so I made some Basmati rice (lighter and fluffier than regular rice) and added about 2 to 2-1/2 cups to it and it turned out perfect. Although the spice was nice, I also felt it needed a little bit more of something so added some granulated garlic and dried cilantro. I would definitely make this again and probably add some diced ham as authentic jambalaya generally has that added to it, thank you for sharing.

Boneless Buffalo Wings
Excellent and so easy to prepare. We use Frank's Red Hot Sauce instead of Texas Petes but is all good!!
