No-Fuss Rice Pudding

Reviewed: Jan. 15, 2007
I loooove this because it is both super easy, and really yummy too! I love how the raisins rehydrate, and the fact that I can make just enough for myself, because no one else in my family is really into rice pudding... Yumm. Excellent with jasmine rice!

Grilled Radishes

Reviewed: Mar. 1, 2007
I thought these were terrible... I read reviews saying they would taste a bit like cabbage, and I LOVE cabbage. But no, they don't really taste like anything... Wasn't impressed.

Aunt Mary's Eggplant Balls

Reviewed: Mar. 2, 2007
Oh my goodness! I can't even describe how wonderful these were... I made them into patties. Prepared them 5 days in advance (we made them for no-meat Fridays in Lent). Wrapped them individually (uncooked) and froze them. We took out 2 today, threw them in the oven and baked them until they were brown on both sides... They were perfect! Wow. These make the best veggie burgers ever! Next time I'll probably double the recipe, because I have a new favorite food... Thank you for these!!! EDIT: We had surplus zucchini from the garden, so I used zucchini instead of eggplant this time. It also works very well!

Spiced Applesauce Bread

Reviewed: Apr. 16, 2007
I just changed my rating from 4 to 5 stars. It's a year since I found this recipe, and I just make it all the time! Wow, it is so good. I was low on eggs today, so I just did a half of a batch and made them into muffins instead, and it was phenomenal! The only change I make to the recipe is that I just brown sugar instead of white sugar. Everything else is perfect! It's so moist and flavorful. Thanks so much for sharing!

Orange Bundt Cake

Reviewed: Jul. 18, 2007
Loved it. I doubled the recipe and used a regular cake pan. However, I think it needs a little more citrusy taste... I used 2 different glazes... First, I used a bit of butter mixed with Tia Maria (I wanted to use brandy but didn't have any on hand) and orange juice and sugar. It's a bit watery, but it soaks into the cake and makes it taste amazing. Then, on top of that, I mixed confectioners sugar with a little bit of the first glaze to give it more of an icing constistency, and poured that over the whole thing. It was a huuuuge hit with my fiance's family.

English Baked Potatoes

Reviewed: Feb. 16, 2008
I've been making these for years. It's a nice easy/less fattening alternative to fries. I like to change up the seasonings every now and then (sometimes I add garlic powder/basil/romano cheese to make them italian... sometimes I add mexican seasoning.) Yum!

Garlic Chicken

Reviewed: Feb. 17, 2008
This recipe makes the most moist and flavorful chicken! And it was so easy. I wanted to make a nice meal for myself tonight after a busy day but I didn't have much on hand. The ingredients for this recipe are always on hand, which is great! I will be making this at least once a week from now on! I didn't change much either. I subbed romano cheese for parmasan (I always use romano instead), and I also added salt, pepper, and some dried basil to the breadcrumbs. Even without the changes, I know it would have been fantastic. Thank you for this! :)

Mom's Coleslaw

Reviewed: Apr. 10, 2008
I made this ages ago, but I still remember how tasty it was! It's just the right mix of sweet and tangy! Mmm! Reminds me of the cole slaw at Red Lobster... I made it for my fiance's family. They are british and their cole slaw is different. Oniony, no sweet/tangy flavor, just mayo. Yuck. Thanks to this recipe I have opened their eyes.

Blonde Brownies I

Reviewed: May 21, 2008
I guess I'm in the minority... But these blondies were just wayyyyyyyy too sweet for me and my family. The whole pan is just sitting on the kitchen table. That never happens in my house. I may try again with less brown sugar... But man, these made my teeth hurt!

Chicken Tortilla Soup V

Reviewed: Jun. 16, 2008
This is super-easy and tasty. I made just a single serving for myself with some leftover chicken that I shredded. Unfortunately I did not have any corn! I didn't realize until I started making the soup, bu it was still good without it. I can imagine how much better it would be with the corn though! I can't wait to try it. I also added some green pepper. It was so delicious!

I made these with regular vanilla extract and Hershey's special dark chocolate chips, and they are just wonderful! Perfect texture. It's the chocolate chip recipe I've been looking for...

JELL-O Magic Mousse

Reviewed: Jun. 18, 2008
My mother made this for me when I had all of my wisdom teeth removed, but now I crave it all the time! It's super-easy and tasty. I love it. We refer to it as "fluffy jell-o" :)

Cake Mixes from Scratch and Variations

Reviewed: Jun. 24, 2008
I absolutely love this. It IS my cake recipe. There is no other. I especially appreciated FAMILYJEANS's suggestion of using oil instead of shortening and using more milk than stated in the recipe. It comes out wonderful!

Layered Pizza Dip

Reviewed: Nov. 28, 2008
This is very very good! I had some ricotta that needed to be used, and this was the perfect recipe... However, I don't use jarred sauce... EVER. So rather than cook some, I just mixed some tomato puree with salt, pepper, garlic powder, dried basil, and a bit of sugar and then poured it on. It was fantastic. Used warm Baguette to dip. My tummy thanks you.

Mexican Rice II

Reviewed: Jan. 27, 2009
Fantastic! I made this rice to go with a mexican feast of enchiladas and tacos, which were superb, but this was MY favorite part of the meal! It tastes JUST like the rice they serve at my favorite authentic Mexican restaurant. Delicious. My search for the perfect Mexican rice is over.

Basic Cream Cheese Frosting

Reviewed: Feb. 6, 2009
Mmmm. This is the simplest, best frosting ever. My fiance doesn't like cake b/c he never likes icing, but he couldn't get enough of chocolate cake with THIS frosting on it. Thank you!

Taco Dip I

Reviewed: Feb. 6, 2009
Me and my mom can't get enough of this dip. I only used this recipe to get the cream cheese to sour cream ratio, but I ended up using the exact same ingredients! It's a classic. Definitely a 5 star junk food. :)

Chicken Tikka Masala

Reviewed: Feb. 6, 2009
This is the best Indian recipe I have ever found. It is just foolproof (as long as you only salt to taste...)! I never feel like grilling the chicken, so I just cook it on the stove top and it still comes out great! I also never use THAT much cream. It just seems a bit excessive and tastes just as good with about half of it. Usually serve it with either roasted eggplant or zucchini, just b/c they're my favs. :)

Best Chocolate Chip Cookies

Reviewed: Feb. 25, 2009
Um, I don't know what it is different about this chocolate chip cookie recipe that makes it so amazing... It doesn't seem any different from the ones I've used in the past, but oh my goodness, I can't believe how good these are. Perfect crispy edge and soft chewy middles. The 10 minute cook-time was dead on! and the cook-time always seems to be off when it comes to cookie recipes... I would rate this 100 stars if I could!

Chicken Broccoli Ca - Unieng's Style

Reviewed: Mar. 14, 2009
This is such an excellent base for chinese stir fries. After making this recipe for a while, which is absolutely delicious as is, I was able to just make great authentic-tasting chinese dishes freehand. No recipe necessary! It is great. One thing that I recommend is to thinly slice the chicken, WITH the grain, not against. This makes the chicken soooo much more tender! You wouldn't believe what a difference it makes. It is how most chinese restaurants slice their chicken. Also, always make sure your wok is VERY hot!!! So important... Excellent recipe! 5+ Stars!!!
