About this Cook
I'm a music education student from Pennsylvania. In the summers I live with my amazing fiance in London. I love music, animals, crafty projects, and of course cooking.
My favorite things to cook
Anything with eggplant. It is my favorite ingredient. I probably also eat chicken every day. I really like to create healthy recipes. I also like to take my family's traditional recipes and make them healthier. I cook a LOT of Italian food, but also some Chinese/Indian/Mexican.
My favorite family cooking traditions
I grew up in an Italian family, and almost everyone in my family is an amazing cook. My favorite family recipes are Chicken Marsala, Lemon Chicken, Eggplant Parmigiano, and my mother's Marinara Sauce.
My cooking triumphs
My biggest accomplishment in cooking was learning to make chicken curry! I had so much trouble learning to cook Indian food, but now I'm getting quite good at it.
My cooking tragedies
I haven't really had any cooking tragedies that I can remember. When I was 15 I could only make home fries and sautteed zucchini... But once I became interested in cooking I just kept getting better and better. No true disasters.

Enchilada Sauce
This was so fabulous! I live in England now, and can't get decent enchilada sauce anywhere, but all of these ingredients are readily available. It reminded me of my favorite Mexican restaurant's enchiladas from back home... Thank you!!!

Quick Coffee Cake
This was wonderful! Moist and tasty, and most of all EASY! I made the recipe with no alterations, except for adding whole pecans with the topping. I wouldn't change anything else about this recipe - and that is so rare for me! Thanks for this one. :)
