just a guy that loves food and learning anything new regarding ingredients, cooking technique, etc. Im the Head Chef for the Bakersfield RV Resort in Bakersfield,CA. Our cuisine I would have to say is.....American style bistro...if that makes any sense. Or upscale home-cooking. Yeah! Thats it!
My favorite things to cook
Anything grown locally, an item I havent used before, and anything in season.
My favorite family cooking traditions
learning how to cook from my mother when I was a teenager, but I really caught the cooking bug when I fell into the industry at 22. I also enjoy making food with my little sous chef, Scarlett. Shes 4, and I look forward to teaching my 1 1/2 year old, Violet how to cook. And showing my wife how to make quick and exotic meals for her and the kids is also an enjoyable event. She makes a mean spaghetti!!!
My cooking triumphs
I guess my triumphs would be anytime I want to make something that I havent made before, and I just dive in head first and it turns out great.
My cooking tragedies
Same as my triumphs, but the results suck!!!

Beer Cheese Soup II
This being the first time Ive made Beer cheese soup, it was pretty tasty. I used Stella Artois, and it had a strong taste. Ill use 1/2 the beer next time, and I caramelized the onions before adding the beer. For cheese, I used smoked cheddar and that gave a great flavor. And next time, Ill use heavy cream instead of half and half to give a thicker consistency. All in all, it was good.

Creme Brulee
very simple recipe for creme brulee. I added 4 Tbs. of Nutella for Chocolate and Hazelnut creme brulee, so it made a bit more than 5 servings. I used 5 oz. souffle dishes to make these. I highly recommend this recipe. So basic, and easy to add different ingredients to make different flavors.
