Portobello Mushroom Sauce
This is a seriously great recipe for mushroom sauce. I usually add a lot of my own twists to recipes, but I didn't need to do anything here at all! The first few times I tried this, I served it over chicken breasts and got rave reviews! I'm going to try this with steak one of these nights!

Sausage Stuffed Jalapenos
This is a super LOW CARB recipe that my boyfriend went nuts over and now requests numerous times per week! I did, as usual, add my little tweaks here and there; I used spicy pork sausage (the fennel seeds and hotness really add a nice zing), didn't completely core the peppers to keep some of the heat, added some minced garlic, used both Parmesan and Monterey Jack, threw in a few drops of Habanero hot sauce (what the heck - BF loves the hotter the better), a little S&P, a bit of LiteHouse Ranch Dip, and a few chopped scallions. Along with the jalapenos, I had some mini red and yellow peppers that I stuffed to use as a buffer from the heat between jalapenos (and for me personally since I'm not a gigantic fan of extremely spicy food). Also... we wrapped them in foil and threw them on the grill with our steaks for about 10 minutes. YUM-O!

Cream Corn Like No Other
Amazing recipe! I have a ton of frozen sweet corn in the freezer and need new ways to prepare it; the same 'ol corn gets old! I am one of the many who does not like creamed corn at all, but I found myself curious while making this (for my boyfriend and his finicky father).... the taste was INCREDIBLE!! The only thing I changed is I did 1/2 whole milk plus 1/2 1% milk because I didn't have any whole milk. And... while tasting it along the way, I didn't even bother throwing in the parmesan. It was so good, I didn't think it could get any better! I will try it the next time I prepare it though just to see! It MAY be a bit sweet for some tastes (depending on the the natural sweetness of the corn you have), so perhaps add the sugar gradually along the way to make it to your liking. My boyfriend lit up when he took the first bite and raved incessently about it. His Dad couldn't say too much because he was too busy eating it! A total hit and a new staple in my recipe book!
