E-Z Drop Biscuits

These are incredible. I can't believe how good these are, seriously. I didn't add the cream of tartar because I didn't have any, and instead of dropping them I made them in a muffin pan - the recipe made 12. I had to cook it for 16 minutes. They were light, buttery, sweet, delicious. Will make again and again!

Impossible Buttermilk Pie

oh. my. goodness. This was incredible!!! I was looking for a way to use up buttermilk -- the pancakes that we make only uses half of the package. This recipe came together in seconds, seriously I think it longer to get everything out of the pantry than it was to put it all together. Baked it for 35 minutes, it came out perfect. the consistency is like custard, it's creamy, it's perfect. I did decrease the sugar to 1 C and it was still very sweet -- we're making a second one right now with 3/4 C of sugar. I wonder what would happen without the sugar, could we make savory pies like quiche? going to try - I'll keep you posted. GREAT RECIPE!!

Easy Brownie Mix Cookies

ok -- these are not going to be the best cookies you've ever eaten, but they are SUPER easy. A couple things you need to pay attention to: it calls for a 19.8 ounce box of brownie mix. If your brownie mix does not have 19.8 ounces, you need to add flour to get it up to 19.8 ounces. When you add the liquids and start stirring you are going to think, this will never come together, I need to add more water. You don't -- just keep working it, it will come together! I added reeses pieces - awesome. they are very good - especially warm :)

Gramma's Apple Bread Pudding

I used leftover challah - good bread definitely improves the bread pudding texture and taste! I made the recipe as written except I used butter instead of margarine, and i added the sugar/milk/butter mixture to the bowl with the bread/apples/raisins, and then added the egg/vanilla mixture and stirred it up before dumping it into the baking pan. I made a double batch which filled my 11x17 pan; and I sprinkled cinnamon on top of it. It was so moist and crunchy on top - super comfort food! I didn't bother with the sauce but it didn't need it -it was so good! everyone wanted the recipe!

Pineapple Zucchini Muffins

pineapple-zucchini-fall-apart muffins: these taste good - the kids like them. I followed the recipe as written except I made a 1/2 batch and used ww pastry flour instead of white flour. my muffins did not rise but spread out all over the muffin pan. the texture is very light and they fall apart when taking them out of the pan. (i used a metal pan sprayed with pam, not liner papers) overall they DO taste good but boy, what a mess...

Taco Pie

ok so there are a lot of ways to change this up. i used an 11x17 pan. i cooked a pound of ground beef and an onion with the taco seasoning - i DID add water instead of adding it dry - because I wanted to cook the onion a little longer. I mixed sour cream with refried beans and put that on top, topped it with cheese & doritos - first impression -- too salty. I think maybe next time I'll use an unsalted chip or skip the doritos entirely and just serve them on the side. everything else was good - we had it with sour cream, avocado, salsa, tomatoes and black olives. this was very quick and easy!

Lemonade Cake II

this cake was very good - nice and moist. unfortunately it stuck to the pan when I went to flip it out so it wasn't as pretty as it could have been but it tasted good either way! there was too much of the glaze -- i only used about half of it - it pooled around the bottom of the cake, so i let it be. You could taste a little bit of bitterness from the pudding or the cake mix - need to try to find a recipe that actually uses lemon.

Cake Mix Cookies VIII

ok these arent' the best cookies in the world but they're FAST!! seriously it took me about two minutes to prepare them! I used oil instead of butter and used reeses pieces instead of chocolate chips. I also added 1 tsp of vanilla as per others' suggestions. I used my smallest ice cream-style scoop - they baked up perfectly - the kids loved them.

Apple Fritters I

this was great! I used whole wheat pastry flour and I added some cinnamon to the batter. Also I chopped the apples into chunks instead of the rings and used an ice cream scoop to drop them into the oil. I bet this basic recipe would work with clams, mushrooms, zucchini, eggplant, etc. the possibilities are endless!!!

this was really good - i doubled the recipe and used three loaf pans for three small breads. I used half WW flour and half white flour - and substituted 1/4 C of the flour with wheat germ. also substituted applesauce for half of the butter.

Favorite Banana Blueberry Quick Bread

I doubled the recipe - used whole wheat flour, 1 C of white sugar and 1/2 C brown sugar - added a tsp of vanilla - and 1 1/2 C of frozen blueberries. baked them as muffins - 25 minutes - came out great! the doubled recipe came out to 30 muffins. good recipe!

Soft Zucchini Spice Cookies

I followed the recipe exactly and the result was a good, chewy moist cookie. however! the batter is very very wet, and it took much longer to cook than the recipe states. I started by cooking them 14 minutes and they were very soft - so soft that they would fall apart when you picked them up. I switched to a smaller spoon and ended up cooking them for 18 minutes and that seemed to do the trick. I think I might omit the milk next time - the zucchini is so moist I don't know that you need it. I also used 1/2 all purpose flour and 1/2 whole wheat pastry flour. overall they tasted good - I think I'll increase the spices next time as well.
