Downeast Maine Pumpkin Bread

I brought this to my office and even with all the other Christmas treats around, the 2 loaves of pumpkin bread were gone by the end of the day. Even people who don't like pumpkin will love it.

Blue Cheese Burgers

Very delicious. We made these with beef and turkey. Both were very good. I even liked the turkey a bit more because it had a very fresh light flavor to it.

Fresh Pineapple Upside Down Cake

I used a 9X9 casserole dish to make this in order to prevent the sugar from burning in the 400 degree oven and I had to cook it for an additional 20min. My fiance loved it though.

Seared Ahi Tuna Steaks

Very good. I used a little more pepper and cooked it about 3 min each side for med rare. I has some left over so I had it the next dya over salad and I think the flavor actually got better. The only thing that I didn't understand was the pepper corns; mine didn't pop??

Ginger Glazed Mahi Mahi

I don't like the texture of the fish- it is a little rubbery. Perhaps if I make this in the oven next time. Also, this dish really needs the sauce to make it good.
