Aw-some Cole Slaw

I think this is the perfect traditional cole slaw recipe. The milk makes it a nice consistency - it's not too goopy or mayonnaisey - very fresh tasting. I cut the sugar by a couple of tablespoons and added radishes rather than carrots. So glad that I found this!

Decadent Pumpkin Muffins

These are amazing! Agree with other poster that they were a bit rubbery right out of the oven but they were moist and delicious about 2 hrs later. They're on day 3 and still as yummy as the first. I added walnuts to the mixture. I also used whole wheat flour and plain yogurt with 1/2 tsp of vanilla rather than vanilla yogurt. For spices, I only used cinnamon and allspice and left out the others - they were still plenty flavorful for me. These muffins are not ultra sweet (similar to cornbread sweetness) which makes them perfect for breakfast or as a side with a bowl of soup. They may be sweeter if you used the sugary vanilla yogurt.

Broccoli and Ramen Noodle Salad

This is a great salad, but you're supposed to add the raman noodle flavor packets (I use chicken) to the dressing. A couple of people had mentioned that it seemed to be "missing something." That's it.

Golden State Mushroom Soup

Wow, I can't believe how good this is given that the ingredients are so simple! I left out the sour cream at the end and added about 1/2 cup of white wine with the other liquids and really loved the results. It was better after sitting in the fridge over night. Next time, I'm thinking of trying it with beef broth for a little twist.

Slow Cooker Vegetable Soup

This is almost as good as my mom's. The fresh veggies are key to the great taste and it's very simple to make. This version is a little heavy on the beef for my taste. Next time, I will substitute some of the actual meat for beef broth and add tomato juice (as opposed to just the diced tomatoes).
