Spinach and Leek White Bean Soup

This was great, and SO easy! I followed the recipe exactly except for using veggie broth. Next time I will tear or cut the spinach leaves versus leaving them whole. My husband really liked it, and sometimes it's hard to fill him up on soup ;) Definitely a keeper!

Beer Bread I

I used Whole Wheat Pastry flour and added 1tbs baking powder & 1.5tsp salt. I also followed others' advice and upped the sugar to 1/3c. I topped with oatbran/wheat germ and poured a few tbs of melted butter on top. This turned out just like the expensive boxed wheat beer bread! We will definitely be keeping this recipe and are happy to find a replacement after long kicking the boxed kind! It's nice knowing what's in your food!

Unbaked Chocolate Oatmeal Cookies

My husband LOVES "no bake cookies" and I've been searching for years to find just the right recipe. He thought this one was PERFECT, just like he remembered them from childhood. I added 1/4c of the optional coconut, but none of the others. My search is over, I can throw away all the other no-bake recipes I've been collecting!

Addictive Sweet Potato Burritos

This turned out really good. I cut the recipe in half and used 2 parts Black Beans, 1 part Kidney. I also recommend at least partially stirring the bean and potato mixture together before assembling burritos. From the suggestion of other reviewers, I added a little syrup to the sweet potatoes, and will NOT be doing this the next time around. I served with guacamole and that was all it needed! The only complaint, preparing the cooked sweet potatoes took awhile.

To Die For Blueberry Muffins

I just got done making this recipe for the second time in three days!! I love how EASY/QUICK this recipe is! I did make a couple of changes the second round. I completely omitted the topping (too sweet, too much for me). I reduced the sugar to 1/2 c and used whole wheat pastry flour and 1/4 c whole wheat flour. I chose to use coconut oil instead of vegetable. Finally, I sprinkled the tops with wheat germ or oat bran before baking. A definite keeper! Why would anyone bake from a box when it's this simple for the real thing?!?

Cinnamon Carrot Bread

I made a few modifications including sub-ing applesauce for some of the oil, omitting nuts and using a different oil. I also added some ginger and nutmeg and sprinkled the top with oat bran. I had to cut more than 10min off the suggested bake time and the outside still burnt. It still turned out pretty good. Next time I'd add more carrots.

Butternut Squash Pizzas with Rosemary

This was SO good, and very 'gourmet'! My husband and I both thought it was a great change of pace for a pizza, and very seasonal. I was very impressed with this! I did follow the advice of others and add a splash of basalmic vinegar during roasting. I used the 'crazy pizza crust' recipe listed here which produced a great thin crust that complimented this recipe perfectly.

Cafeteria Carrot Souffle

This was a great way to use up some extra carrots. It made a nice change of pace side dish. It DEFINITELY has the texture of something from the cafeteria! Instead of mashing, I just added everything to my stand mixer and beat. I used honey instead of sugar & omitted the powder sugar toppingn. My husband thought it tasted like a sweet potato casserole but my 16mo daughter did not care for it, at least not this time around. A keeper none the less!

Moroccan-Style Stuffed Acorn Squash

WOW!! This was great, what a wonderful and unique squash recipe! I made a few changes. I didn't have broth, so just used water and added some thyme and extra spice. Instead of celery, I used chopped spinach. Instead of sugar, I added honey to the melted butter. There was quite a bit of 'filling' left over. Refrigerated, it made a WONDERFUL cold salad the next day. I plan on using it this way as a potluck dish. Will definitely be making it with the squash again too, such a pretty presentation!

Ricotta Stuffed Squash

My husband raves over this one! I've made it with zucchini with equal success. I've also done some small modifications, depending on what I have on hand (mozzarella vs. parm..) Definitely a keeper! A great way to use extra squash from the garden, or just to incorporate a different veggie into your meals!

Quinoa and Black Beans

This was easy, very little chopping which is nice. My one complaint, the cayenne! I felt it just really overpowered all the other flavors, even the fresh cilantro taste was missing because of the pepper. Next time I would omit the cayenne or add just a VERY small sprinkle.

Delicious Black Bean Burritos

These should be renamed Deliciously EASY Black Bean Burritos!! So simple to make and so yummy. I omitted the jalapeno, just to make it easier since I don't normally have them on hand and added a shake of cumin. The cream cheese really makes the filling! Definitely a keeper!

Carrot Cookies II

I was so bummed with how these turned out! Very bland, even after adding extra cinnamon and some vanilla, along with nuts and raisins! So less than mediocre that I was too embarassed to even let anyone taste them! I couldn't even get my young daugter to eat these :(

No Bake Peanut Butter Pie

I took this to a potluck and everyone raved about it! I had many requests for the recipe/to make again. Perfect for a hot summer day both as a cool treat and the fact that it's no bake. It was SO EASY to make! The only addition I made was to cut up two peanut butter cups to decorate the top with. I did use a tad less whipped topping than the recipe called for too. A keeper for sure! 5 stars for ease of preparation and final product.

Mexican Bean Salad

4.5 stars (if I could) only because it wasn't one of those recipes that really stood out at the potluck. Noone commented on it or asked for the recipe. I thought it turned out beautifully though! I followed the advice to halve the oil & vinegar and am glad I did. It was just the right amount of dressing. I didn't use the entire onion and am also glad. I think you just need to play it by eye with the amounts of peppers and onion since they can vary so much in size. I just added until I had a nice blend of colors, which also meant I cut back on the amount of corn too. I will keep this recipe. It'll be very easy for future potlucks/picnics and am even thinking about premaking it for our next camping trip!

Sour Cream Banana Coffee Cake

I must've used too large of a fluted pan(my mom actually laughed at how flat it was)..but even at that, this coffe cake just didn't work. It ended up dry, and not very flavorful. Definitely NOT the best way to use up over ripe bananas in my opinion!

Portobello Penne Pasta Casserole

This went over very well! Very easy to make ahead of time and refrigerate until ready to pop in the oven. I have to admit, while putting all the ingredients together I was a little turned off..especially with the soy sauce..but, was pleasantly suprised at the outcome!

Black Bean Pasta

I wasn't expecting much from this recipe, but was pleasantly suprised! I didn't have red pepper flakes, so I added a dash of chili powder and an extra clove of garlic. Five stars because it was amazingly EASY! I prepared the green bell & onion ahead of time and just threw it together. My 13mo daughter and husband both enjoyed this!
