Tomato Zucchini Squash Skillet
This is delicious! I cheated a little, and used a can of fire roasted tomatoes with garlic, and added basil, thyme, and oregano. This would be great as a main dish by adding chicken breast and pasta.

Sausage Jalapeno Poppers
I hate to be the one to go against the fact, I tried this recipe originally because of the rave reviews; and the fact that I had a TON of jalapenos from my garden (still have jalapeno jelly canned from last year). I must say, I was not nearly as impressed as everyone else. These were EXTREMELY greasy! And I even baked them on a rack to keep them out of the grease. As the bacon cooked around them, all of that grease soaked into the filling. I suppose to people who love bacon, and greasy fried foods, this is a hit; but for me it just made me kind of sick to my stomach. Sorry, but I don't think I'll try this one again.
