Crustless Spinach Quiche
Made this with a mixture of cheddar and wensleydale cheeses. Think the wensleydale was a little sour for this dish, but will try again without.

Sweet Potato Rosti
Sorry about that! Add the eggs at the same time as you mix in the goat's cheese. Make sure you put the rosti straight into a hot oven, otherwise the eggs start to leak out of the potato mixture!

Creamy Carrot Soup
Yummy perfect carrot soup. Absolutely gorgeous, even without the cream - I tried subbing milk and that was great - but it's fine without milk too. I didn't have any rosemary or broth, so used dash of ground nutmeg and chicken stock, and it still turned out brilliantly. Would like to make again using the rosemary!
