Garlic Cheddar Chicken

I cooked this recipe just as written. It was good, but I can imagine the different ways I can make it just a bit better. While the chicken was good, it was overshadowed by the yummy sides I made. Next time I will use egg instead of butter to see if that makes a difference. I will say that the chicken came out juicy and tender and my kids wolfed it down. Because of this, my next attempt might include making this into chicken nuggets - what a treat for the kiddos! Thanks.

Oven-Roasted Asparagus

I buy asparagus for two reasons. My husband LOVES it and my kids need to eat it - (it's nutritious and it's always important to expose your kids to different veggies!). I however, have NEVER liked asparagus... until now! Wow. I used all of the optional ingredients. I'm not certain that it made a difference but in a pan over medium heat, I browned the chopped garlic in olive oil first, then drizzled over the asparagus. Then added the other ingredients. VERY GOOD, this would have easily been a 5 star from my husband because anything with asparagus is 5 stars to my husband. My kids ate it without coming up for air, so another 5 stars from them, and YOU MADE ME LIKE ASPARAGUS!!! So 5 stars from me as well. Thanks for this delightfully simple and YUMMY dish! I see more asparagus in the future for us!

Baked Haddock

This was good, and I'm not crazy about fish (but eat it so my kids will and because my husband LOVES fish). I tried this recipe as written and received rave reviews from my husband and son. I will make this again because I'm trying to increase our fish dinners from once to twice a week regularly, but I may tweak the recipe just a a bit. So... for me - 4 stars, for the fish lovers in my family - 5+

Chili Mac

I'm going to give this 5 stars for one main reason - This feeds my family of 4 (two adults, two young children) for 2 nights, plus 2 lunches for my husband and myself. It tastes great and the kids eat it up! This is wonderful for those extra busy days/evenings. Thank you!

Cowboy Mashed Potatoes

This was good, but I could not add the peppers because of the kiddos. Will definitely try it with peppers when I can! Other than that, the only thing I did differently was add some mayo (no butter) and topped my own serving off with a touch of A1. Thanks!

Italian Breaded Pork Chops

VERY good. I did as others suggested and did a light dusting of flour first, then egg/milk, then crumb/cheese mixture. I had an assembly line going with my kids, one dusted each side with the flour, handed it off to the next who dipped the chop into the egg, then handed it to me so I could dip in the crumbs and place in the pan. Very cool :) The breading stayed on the chops and while it was crunchy, it was moist and tender on the inside. My husband said it's his favorite pork chop dish thus far! I made 7 chops this way, 3 were thicker, just under an inch, 4 were fairly thin, ALL were wonderful! I just made them in separate pans to account for the slight difference in cooking time.

Grilled Salmon I

This was fantastic! Made on my indoor grill - just amazing! I did not add any salt as the soy sauce was plenty and I squeezed the juice of half a lemon into the marinade, served it with quinoa and broccoli. Very good, this will be a hard one to beat, so easy, relatively few ingredients and YUMMY.

Marinated Grilled Shrimp

WOW. Wonderful. It started pouring rain unexpectedly just before I planned to cook out--- I used my electric grill and it was still wonderful! Kids loved it and previously they only liked popcorn shrimp. Thanks, very nice, definitely added to my recipe box!

Parmesan Fried Zucchini

This was pretty tasty! I cut the zucchini like fries, next time I think I'll slice, seems like it would be easier to turn in the pan. Both my kids ate this without complaint, so that in itself makes it worth it!

Simple Turkey Chili

Very nice, I might add something to thicken it up a bit, but that is a personal preference. Overall, this chili had great flavor! Thanks for another tasty meal to add to my recipes! Looking forward to more of this over the winter.

Easy Lemon and Garlic Broccoli

I tried this tonight as a side to my tenderloin. It was tasty! It's best straight from the pan to the plate to your mouth, so make it your last item removed from the stove. I gave it 5 stars because overall the recipe title says it all- it's easy to prepare, lemony, and garlicy. Edited: after making this recipe multiple times (we LOVE broccoli!), I now steam my broccoli in a steamer basket instead of cooking it in a pan. (I didn't like that the broccoli turned brown). I pour my lemon juice over the broccoli and leave it to steam. When finished, I place the steamed broccoli in a glass pyrex bowl and squeeze 1/2 fresh lemon over it, pour the melted butter & slightly browned garlic directly in the bowl, cover, shake and serve. DELICIOUS!

Baked Ziti I

Wonderful meal that the whole family loves! I did as someone suggested and mixed the sour cream with the pasta after draining, it went a long way to keeping the pasta tender after baking. I have made this meal 4 times for my family and I will continue to do so.
