About this Cook
I was born in Panama and have lived in the US and Europe. Currently reside in the golf capital of the US, work part time from home and am a mom to 2 great kids and a wife to an amazing husband. I have really come out of my cooking shell and have found cooking for my family to be one of my most therapeutic hobbies.
My favorite things to cook
I really enjoy cooking foods that my family wolfs down :) I have a new found love of fall and spring, fall is a time for amazing soups, chilis, and stews. I was never good at these before, but I've gotten much better with practice! Spring is all about warming up the grill and enjoying the breeze! My favorite things to cook are recipes where my kids can help.
My favorite family cooking traditions
Obviously, there are the holiday dinners. I have successfully made honey ham on my own and avoided the long line at the honey baked ham store... plus mine was better :) My parents started a tradition that I'd like to carry on when my kiddos are a bit older - Sometime around age 16, one of my chores was to make 1 dinner per week for my family. It was always really simple things and I couldn't stand it then, but now I see the value in it. (Thanks mom).
My cooking triumphs
My greatest triumph is that I have kids who will eat a variety of foods now, usually because I get them involved with making them. They eat all kinds of seafoods, meats, veggies, healthy foods, you name it. I think this is because they feel a sense of ownership over the dish - they worked hard to make it, they are certainly going to eat it! My other greatest triumph is my hubby says I cook better than his mom... sorry, Dale, he said it, not me!! :)
My cooking tragedies
Baked desserts and I... we just do not get along. I'm working on it, but if I'm responsible for a potluck dessert, party dessert, or get together dessert... Harris Teeter is my friend! I'll get it right one of these days :)

Garlic Cheddar Chicken
I cooked this recipe just as written. It was good, but I can imagine the different ways I can make it just a bit better. While the chicken was good, it was overshadowed by the yummy sides I made. Next time I will use egg instead of butter to see if that makes a difference. I will say that the chicken came out juicy and tender and my kids wolfed it down. Because of this, my next attempt might include making this into chicken nuggets - what a treat for the kiddos! Thanks.

Oven-Roasted Asparagus
I buy asparagus for two reasons. My husband LOVES it and my kids need to eat it - (it's nutritious and it's always important to expose your kids to different veggies!). I however, have NEVER liked asparagus... until now! Wow. I used all of the optional ingredients. I'm not certain that it made a difference but in a pan over medium heat, I browned the chopped garlic in olive oil first, then drizzled over the asparagus. Then added the other ingredients. VERY GOOD, this would have easily been a 5 star from my husband because anything with asparagus is 5 stars to my husband. My kids ate it without coming up for air, so another 5 stars from them, and YOU MADE ME LIKE ASPARAGUS!!! So 5 stars from me as well. Thanks for this delightfully simple and YUMMY dish! I see more asparagus in the future for us!

Baked Haddock
This was good, and I'm not crazy about fish (but eat it so my kids will and because my husband LOVES fish). I tried this recipe as written and received rave reviews from my husband and son. I will make this again because I'm trying to increase our fish dinners from once to twice a week regularly, but I may tweak the recipe just a a bit. So... for me - 4 stars, for the fish lovers in my family - 5+
